A couple of questions

First, can I use my rewards card at counter restaurants?
Second, should I make an ADR for all dining other than counter restaurants?

I can't answer your first question but as for making ADR's for non counter service, I would recommend it. It may not be necessary if you're going at off-season but even then I would recommend having a few for the places that you truly don't want to miss.

i'd make reservations for anyplace that you really want to eat at, places book up fast and you'd hate to have wait hours to eat

I hope you can use the rewards, I am planning to pay for 2 Hoop Dee Doo meals but you pay for that in the resort the day you check in to get it off you credit card. If you charge the restaurant on your room key and go in before check out day you can pay the key off, I'm thinking of charging the tips back on the room key and going in the day before check-out to pay the charges on the key with the rewards card. And maybe paying for tickets for Typhoon Lagoon, have a couple hundred to use up so they best take it.
Does anyone know if I can't do this, I think at WDW you can use it for just about anything.

you can use the rewards card... they process it just like a debit card.

I have used it the last 2 years we were there in Sept. but we used it to buy stuff in the shops, but this year the Hoop and Typhoon. It was nice getting the 5% this year after a certain amount was spent in some months. Don't forget the card expires after 2 years so spend everything if you don't plan on returning in 2 years. Last year we used it up cause 2 years was near and we just ordered the new rewards card 2 days ago for this trip in Sept.
Nice free DDP and also Free Hoop and Typhoon Lagoon. Common Sept. 21st.
