some more recipes other then pie and baked apples.....anyone got any good ones
 
I've got a wonderful apple cake recipe, but I'm at work right now. I'll try to remember to post it this evening. Wish I had a piece, right now, but since I'm doing low carb, it's a "no no" for me. :(

Take Thick cut pork chops and split them to make a pocket, stuff them with a mixture of chopped or sliced apples, raisins and brown sugar and cinnamon. Bake in oven.....

sorry not a detailed recipe, I usually just wing it.
 
Apple Cake with Sauce

4 cups apples, peeled and sliced
2 cups flour
2 teaspoons cinnamon
2 eggs
2 teaspoons vanilla
2 cups sugar
1 ½ teaspoons baking soda
1 teaspoon salt
¾ cup oil
1 cup chopped pecans

In large bowl place apples and coat with sugar. Add all dry ingredients. In separate bowl, beat eggs, oil and vanilla. Add to apple mixture. Batter will be very thick. Stir in pecans. Pour into greased 9x13 pan or Bundt pan. Bake 50 minutes at 350 degrees.

Sauce:
1 cup sugar
½ cup butter or margarine
½ cup cream or evaporated milk
1 teaspoon vanilla

In small saucepan bring to boil over medium heat. Serve sauce separate.

A-To-Z Bread

2 cups sugar
1 cup vegetable oil
3 eggs, lightly beaten
2 cups A-To-Z Ingredients (choose from list below)
1 tablespoon vanilla extract
3 cups all purpose flour
2 teaspoons ground cinnamon
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
1 cup chopped nuts (your choice, almonds, walnuts, pecans, peanuts…whatever goes best with the A-To-Z ingredient you choose.)

A-To-Z Ingredients: (choose 2 cups of one of these)
Apples, peeled and chopped
Applesauce
Apricots, (dried) chopped
Bananas, mashed
Carrots, shredded
Coconut
Dates, pitted and chopped
Figs (dried), chopped
Grapes (seedless), chopped
Oranges, peeled and chopped
Peaches, peeled and chopped
Pears, peeled and chopped
Pineapple (canned), crushed and drained
Prunes, pitted and chopped
Pumpkin, canned
Raisins
Raspberries, unsweetened fresh or frozen
Rhubarb, chopped fresh or frozen
Strawberries, fresh or frozen
Sweet potatoes, cooked and mashed
Zucchini, peeled and grated
A-To-Z Bread Continued…

In a mixing bowl, combine the sugar, oil, eggs; mix well. Stir in A-To-Z ingredient of your choice and vanilla. Combine flour, cinnamon, baking powder, baking soda and salt; stir in nuts. Pour into two greased 8”x4”x2” loaf pans or four mini loaf pans. Bake at 325 degrees for 55-65 minutes or until a wooden pick inserted near the center comes out clean. Cool in pan 10 minutes before removing to wire rack.

Pumba, if you still have apples left over this is a good and easy way to make applesauce in the microwave.

Microwave Chunky Applesauce

10 c. sliced apples
1/2 c. sugar
1/2 tsp. cinnamon (add after apples are cooked)

Mix apples and sugar. Put in a large bowl and cover with wax paper. Cook on high for 10 min. Stir, then cook for 8 more min. on high. Let stand covered for 7 min. Add cinnamon and stir apples. You can use a potato masher if you want a smoother consistency and you can add a little water if you like your applesauce thinner.

I usually use Macintosh apples and they cook up really well. Sometimes I don't even use the masher. Stirring alone is all that's needed. It just depends on the type of apple you're using.
If you have alot of apples to use this recipe is great and it freezes well, too.
 
This is my grandmother's recipe. It's soooo good!

Applesauce Cake
2 tsp baking soda
1½ Tbl water
2 1/2 c applesauce
½ tsp nutmeg
1 Tbl cinnamon
¼ tsp cloves, ground
1 c sugar
4 c flour
1 c shortening
1 c raisins, rinsed
1 c walnuts (opt)

Dissolve baking soda in water. Combine all ingredients except raisins & nuts. Mix until well moistened. Stir in raisins & nuts. Bake at 350 for 45 to 60 minutes in greased & floured pan. (two 9x9 or a 13x9) Top with Caramel Icing or Cool Whip.

Caramel Icing
1 Tbl butter
5 Tbl milk
2 c brown sugar
1 Tbl vanilla
Combine all ingredients in a saucepan & stir until sugar dissolves. Cook syrup for 2 minutes, stirring constantly. Cool until you can hold your hand on the bottom of the pan. Beat 2 minutes & spread on a reasonably cooled cake.

DD's 1st grade teacher used to make these:

Apple Pizza
1 can refrigerator biscuits
1 c grated cheddar cheese
4 apples, sliced
½ c brown sugar
½ tsp cinnamon
2 Tbl flour
dots of butter (opt)

Flatten biscuits & place on ungreased cookie sheet. Put 3 - 4 apple slices on each biscuit. Sprinkle with cheese. Mix sugar, cinnamon & flour. Cover each biscuit with cinnamon mixture. Dot with butter. Bake at 350 for 8- 10 minutes.
