We are going to be in WDW - MK on a birthday and I was considering a few places, Cinderella, and Beast, but I was wondering if there were any out of the park ideas for dinner, this is our 2nd day at MK so we are a little more flexible...

What I was thinking was one of the above two, plus the dessert party before fireworks (or also open to other suggestions)...

Storybook Dining at Wilderness Lodge would be a good birthday dinner. Boat over from MK and then back again.
 
You would not be disappointed in Hoppers suggestion. Loved loved loved Storybook dining! And the reservation appeared 2 days before on an alert. Multiple too.
 

We were very, very disappointed by Be Our Guest. The acoustics in the ballroom make it feel like a cafeteria, and the Beast’s appearance can barely be called that. The Beast walks up and down the center of the room and hopefully you have a telephoto lens on your camera because he’s not coming anywhere near the tables along the sides.

We had a fabulous time at Cinderella’s. My 9 year old loved it and we had fun meeting all of the princesses. There is a photographer downstairs to capture your moment with Cinderella (not one of those awful photo boxes).

Dark horse option, but what about California Grill in the Contemporary? If your 8 y/o has never seen the view from up there, it’s fun and something different.
 
My son had his 8th bday and 9th bday at Whispering Canyon. We had great meals at both. Unfortunately, it was during covid restrictions.
We went back last year for dinner and they were a few people celebrating their bday. The server had them stand up and “gave” them each a cupcake. DS and DD now ask if we can go back because they both for their birthdays so they have a Cupcake smushed in their face. (Not sure how often that actual happens)
 
I would not miss the chance to have my daughter’s birthday in the castle. We spent my daughter’s 9th birthday there and still look back very fondly on it.
 
If you want to keep transportation time to a minimum, I would stay in the park and do Cinderella - perhaps consider doing lunch as the meal includes a dessert and it wouldn't interfere as much with the dessert buffet at the fireworks event. Or even consider breakfast for a slightly better value?

If you have time to spare and don't mind leaving the park, I would put Storybook (as PPs suggested) into the mix or even consider the 4 pm Hoop Dee Doo Revue at Ft. W - it's a lot of fun! If you do the 4 pm show, you would make it back to MK in time for the fireworks dessert party.
