Yes - a rented DVC stay counts! We're doing two, and we covered nearly half our minimum room-night requirement just with our honeymoon DVC stays! 
We found a member through the DVC section of the DIS who rented to us - so far it's been great! Read the posting rules to figure out how to post your request, and then members contact you - or you can look for a member post about how many points they have to rent at their resorts.
