I have a split-stay July 30 and July 31 check-ins leaving August 2nd.

When is the earliest I can make my FP+ reservations? (I'm getting 2 different answers from Disney.)
One said May 29th at midnight AM. One said May 31st at midnight am. What is it really?

Also, since I have a split stay does that impact when I can make FP+ for the whole vacation?

60 days before July 30 check-in would be May 31, at 1:00AM, by my calculations. You should be able to make FP+ reservations at that time for everyone arriving both July 30 and July 31 (as long as you're all linked on MDE).

(Which many would call, "the middle of the night" of July 29.)

So, the OP, AuntTink, could stay up late on July 29, and be able to book FP+ at Midnight, Eastern time.

Why do you list "May 31" as a 1AM (EDT) booking time?

Please check your math Robo, their check-in is July 30, I'm pretty sure 60 days would be May 31, and according to mesaboy2's purple link, May 31 is on the list to likely be a 1am booking day?

It looks like we have some calendar info conflicts.

HERE is the Travel Agency calendar for May.
It is most often accurate, so I use it.
(But, NO calendar is ever 100% correct, and it appears to be wrong this time.)

Not usually the best source believe it or not, but in this case I think that's right.

http://www.wdwinfo.com/wdwinfo/hours/may15.cfm also had 1AM for May 30, but 7PM close May 31 instead of 6PM. If we average out those three schedules, that makes May 30 closing 12:40AM and May 31 closing 6:20PM.
