Many, many years back some of us started doing $40 a day threads a la Rachel Ray. $40 would be a little difficult these days, so I simply went through some menus and found items I know I would eat and ended up with a $60 a day.
NOW, this is how I would do it and it fits the way I would eat at Disney. I always drink water with my meals, so that gives me a little more leeway with what I choose to eat. I included breakfast, lunch, and dinner with one snack per day and an option of adding in a refillable popcorn bucket, because I would probably do that.
So, here's my $60 a day. Care to join me with your own???

We drink water with meals, we mainly eat at QS locations, only two of us are dessert fans, and we're vegetarian, so when I'm making a rough budget for our trips, I use $250 as a base daily food amount, which right off that bat is only $62.50 each, so for sure we could stick to $60.00 a piece if we wanted to do so. :) I'll have to see what I can mock up for myself for a day at each park working with their current menus. We always eat breakfast in our room, with food we buy outside the bubble, so figuring out a breakfast each day will be the trickiest part of this for me. :)

Well, DS (13) and I are going in January. We always bring breakfast items to eat in the room, eat mostly QS, and I will be bringing lots of snacks. I am hoping to keep it to $70 a day for the both of us and I think I can do it. DS is not a big eater.
ANYWHO, here's my $60 a day plan for just me:

MK
BoG French dip $17.50 w/ diet Coke $4
Citrus Swirl float $6
CHH harbour salad with chicken $12
refillable popcorn bucket $12
total: $54.85

EPCOT
Sunshine Seasons salmon platter $13 w/diet Coke $4
les Halles strawberry tart $5
France orange slush $10.75
Tangierine Cafe chicken shawarma platter $15
popcorn refill $2
total: $52.98

HS
50s Primetime Cafe Mom's sampler $26
Hollywood Scoops brownie sundae $6.80
Ronto Roasters ronto wrap $13 w/ diet Coke $4
popcorn refill $2
tip: $5
total: $60.17

AK
Satuli Canteen beef bowl $14 w/ diet Coke $4 and blueberry cream cheese mousse $5.30
Pongu Pongu Night Blossom $8
popcorn refill $2
Flame Tree BBQ ribs and chicken combo $15.50
total: $51.97

That was fun!

My mom and I will often eat for $60 a day combined, if we stick to QS all day (most days). This is what a day would be like when we were at POR last year:
  • Breakfast at the resort, two kids meals at $6.50 each
  • Lunch at Satu'li Canteen, beef bowl ($14) and kid's hot dog ($7)
  • Popcorn or cinnamon almonds, $5
  • Dinner at Yak & Yeti QS, honey chicken ($12) and kids cheeseburger ($8)
  • Mickey Pretzel $7
  • Total: $66
Since this is two people, I am counting $66 as a win despite the $60 budget ::yes:: . We are comfortably full with this amount of food, maybe add another $10 for some ice cream or snacks at night when we get back to the resort.

Kids meals are such a great way to save. Some other ways we come in at around the same amount is sharing a regular sized breakfast, and sharing larger sized QS lunches/dinners. (MK in particular is great for this with the toppings bars at Cosmic Ray's and Pecos Bills, where I can stretch a chicken sandwich or nachos into two huge meals.) We are water drinkers too, so no temptation for us to order fancy drinks. (I'll leave those for the work-sponsored happy hours!)

The budget is definitely out the door if we do table service. We usually have done around two per trip, but this next trip we have almost one per day planned. I'll be curious to see if we find it too overwhelming since we are used to eating lighter at Disney. The junk food weighs us down a lot, even sharing, so adding heavier TS meals could be a mistake for us. We shall see!

I feel like this would be easy if you stuck to QS and ate breakfast in the room and would even get you a snack or a nice drink as well, plus no having to tip.

We typically average about $50/person each day for most trips, so $60 would be a splurge 😂. I have my first big solo trip coming up (more than my usual 1-2 solo days), which I'm sure the average will be higher since I can't share like my family usually does.

Just want to throw in, for those truly on a tight budget, there is 6.5% sales tax added. At $60/day, its only $4/day fr tax, but for a family of 4 at WDW for 5 days, it can be an extra $80.

I didn't make it clear in my OP, but I did add the 6.5% tax on my totals already, so still safely close to the $60 a day challenge.
