We currently have 6 day park hoppers and we're thinking about upgrading to 7 days once we're there. Can I make FP+ reservations for more than 6 ticket days?

No, your max is 6 days of FPs.

You can always leave the least necessary day for FPs open and then book for it when you add on your 7th ticket entitlement.
