So we are at least 9 (4 adults and 5 kids plus an infant) and perhaps 11 (2 more adults). Looking at the point requirements for a 3 bedroom villa, it seems smarter to go with a 2 bedroom villa and add on a studio or 1 bed if my sister decides to join us.

We plan to stay for a week, Saturday to Saturday preferred and are open to any week in September and even the first few weeks in October if necessary. Would you mind checking out availability of 2 bedroom villas: my order of preference is Animal Kingdom (Savannah view preferred), Boardwalk, and Saratoga.

Unfortunately there is no availability for the resorts you wanted.
The only availability is at Vero Beach, deluxe studio 60 points and Inn garden view 52 points. Both are suitable for 2 adults and 2 kids.
