Where are you staying?

Personally, I'd do

Epcot - Le Cellier (1), Marrakesh (1)
MK- Narcoossee (2)
AK - Tusker (1), Yak and Yetti (1)
 
Epcot - Via Napoli, Chef de France or LeCellier
MK - CP
AK - great choice for breakfast b/c we always go to Tuskers House every Disney trip. Try Yak and Yeti for late lunch.
My husband and I favorite signature is Citricos, Narcoossees, Jiko and Flying Fish.
 

If it is for next week I would probably just go online and see what they have available. Last minute resie in April might be slim picking. Maybe not but I would see what there is.

To be honest it would be easier for you to check the availability of the restaurants, choose a few you want to know about and ask the forum.
Restaurants are going to be pretty booked, so most people are going to be suggesting places that you can't get into.

By the time someone suggests a place that probably has availability it may be gone.

I would look at the menus and then just choose places that fit my family's likes.
Chances of getting popular restaurants will be very slim, so get what you like reserved and enjoy your trip.

This is actually a really good idea. I can't imagine that there are going to be a lot left for ADRs. If you already have Le Cellier, then there would be good for Epcot. I'd say whatever you can get for MK, and you've already got Tusker House. I'd check out the signature restaurants or the resort restaurants. I think if you don't already have them, in park places are going to be hard to find.
 
If you're at MK on Tuesday I'd suggest Citrrico's . It's one of our favorite signatures. At Epcot we like Chefs de France and Coral Reef. As far as AK is concerned we haven't been to Yak and Yeti because they don't take TiW, but the reviews have been pretty good.
 
I just checked and you can get (I used a table for 4 since I didn't know how many you have) and you can still get Narcossees or Citrricos around 7ish.
 
We are there Monday, checking out Wednesday, on deluxe dining plan. We would like to use our credits for all three days. DH would like a signature meal one night without running all over the place to get it. And, the kids would like a character breakfast at Tusker House on Wed morning (reserved).

Our plan is Epcot- Mon; MK- Tue; and Animal Kingdom- Wed. Where would you eat each day?

Most guests start making their dining reservations 180 days out. What you have to choose from may be very limited.
 
Most people do NOT start making ADRs 180 days out. Many dissers do, but we are the vast minority. Last September, on Friday night preparing to fly out Saturday, after 6 months of goading, my sis says Can we find a place to eat Monday night? This was during free dining. We had 2 of her kids joining us then. I checked resorts for a 1 credit TS late and found 3 and ended up at GFC for a wonderful meal. Most signatures don't fill up, except those with a view of Wishes for that time of night. You should be fine. Finding something in the parks could be real tough.
