We would like to schedule our next trip in 2021.
Considering crowd levels, which would be better: the second week of February, or sometime in June?

I would vote for February - but the closer you get to that mid-Feb time period, the busier is it likely to get. You'll have Valen's Day, President's Day, Mardi Gras, and probably Daytona bringing people in beginning that mid-Feb weekend. If it was us, we'd probably look to be there and done before 2/11 or 2/12/2021 - it's likely to get busier after that! We've done earlier in Feb often, and most years it's not terrible with crowds.

On the other hand, you could encounter more construction and refurbs in February than you might in June - could be a tradeoff. Good luck with your trip!

Avoid Mardi Gras at all costs! We went one year over President's Day, I expected it to be busy. It over lapped Mardi Gras, it was crazy!

If you are only considering crowd levels, then probably February. As PP noted any time near President's weekend will be very busy. Also, you may have to deal with large groups from Brazil during that time. Considering the weather (too cool for me), the shortened park hours and the attraction refurb's, I'd choose early June if that is an option (school's in the northeast don't get out until mid to late June).

Given the two choices I'd go with June. We went the first week of Feb in 2018, based on all of the crowd calendars saying it was one of the very lowest crowd times if the year and we could even expect 1/10 crowd levels! Guess what? They were dead wrong. Evidently everyone else showed up looking for low crowds too. Crowds were actually 8+ /10 and we were shocked. June has better weather where you can spend time at the pool if the crowds at the parks are too much. They also have longer hours, typically, which helps with spreading out crowds. Don't get me wrong, if Feb was my only time to go, I'd do it (trying hard to avoid presidents day week/Mardi Gras). But given the choice, I'd go another time.

Just to play counter point a bit .... it's hard to tell crowds now adays - summer has actually had lower crowds and the fact they extended the Sun and Fun deal makes me think they expect summer to be slow

Also, if you are interested in some of the rides currently being build, while no guarantee I think there is a better chance that either Tron or Guardians is open in June vs February

February seems to be particularly croweded. However, I find it is just crowded all the time now with Galaxy's Edge openning. June can be hot, like almost uncomfortable to walk around the parks, February tends to be much more mild. Disney seems to almost always run a 20%-25% off hotels deal each summer, so you may find a better room rate in June. Resulting in me saying, each has its benefits. Pick whichever one works best for your family as someone said above, its just crowded all the time now!

We are now leaning toward June. June would also permit us to stay longer.
We are interested in the Fun in the Sun deal. How soon will that kind of deal be released?

If we book later this year, then they put the deal out after that, would we lose dining reservations and fast passes? A CM I talked to on chat assured me not, but it seems like I've read about that happening.

You can book your room. And when deals are released you can change your room. I booked my January trip in June, no deals posted. As soon as the January deals came out, I modified my room.

If you plan to go and enjoy water parks, I'd pick June. February seems to be too filled with families that have kids on February break.

We've gone the week before President's day (I think that's the one that aligns with our Family day) and the crowds were not the lows I expected. Dance or cheer or something competitions going on, I think we were coming off the tail of a marathon or something, and combined with several refurbs resulted in the remaining rides having just as long wait times, or in some cases longer, than I've seen on a trip at the end of August. The friday before President's day, 7DMT had a 4 hour wait time. Combined with the big swings in weather at that season (like 47F to 76F back to 52F in a day) given your choices, I'd be looking at June, if it's early June. If it's late June, you might be getting into the school year ending crowds. Haven't been there during that time, so don't know how it is then, but I do know our next one is booked in Aug again.

I've been able to change up and add free dining when it was offered after already booking, and that didn't affect my dining reservations (it was still pre FP booking, so I didn't have any of those). In most cases, as long as you're adding a discount code to what you already have, it shouldn't be an issue. If you're completely cancelling and rebooking, it might. Like, if you say, want to change your plans from the first and second week of a month, to the second and third week of that month, I think you'll probably lose the fast passes. But just adding a discount code shouldn't affect it.

Coming from a Northern location, I feel like everyone I know is in Florida in February at some point, which is why I'd pick June, LOL!

We were just there for three days over Mardi Gras and it didn’t seem busier than normal to me and we had a double stroller with two little kids to maneuver. The weather was great though!

I just came back from a (weekday/ non holiday) Feb trip and I prob would not go back in Feb again. I got great pricing but I had hot summer weather with extra crowds. If I was going to get hot weather with rain I would choose another time with the hopes of lower crowds! haha, I think I was there during an abnormally hot few days in Feb though.

I'm not a WDW vet, but I would pick June. Hopefully they better staff in the summer, have longer hours, and less refurbs. I've been reading so many threads on horrible crowds in February.

If your main consideration is crowds, I'd try for early June. From what I have seen on this site, Youtube, and social media, February has become one of the busier times of the year. I cannot wrap my head around why they closed MK at 8pm on certain days. At least in June, MK stays open until at least 10pm on most days.

In our experience, early February would be the choice for lower crowd level. Very cold days can come out of nowhere in February though.

We went at the beginning of June last year and it was not very crowded at all during the week. It was hot, but the humidity didn't seem too bad yet so it was doable.
