It will be just the two of us (DH+DW) for Easter Week. We will be staying at GFV and BWV's.

We've been to MK 4-5 times in the last 2+ years, most recently for Christmas with family.

Looking for suggestions on things to do that maybe we've just kind of forgotten about over the years.

We will be doing our own Monorail Lounge crawl and renting bikes at VWL to bike to Ft Wilderness. We will be there for 8 days and will spend some time at pool during the day and going to the parks a bit, probably more to EPCOT for dining.

Any suggestions on things to do. We've done Backstage Tour at Mk, boated, mini-golf, etc. Feel free to just list ideas.

We enjoy the miniature golf followed by a relaxing drink at the Cabana Bar and a
MK stroll down main street without the need to rush for FP/rides.

I've also been looking for new/overlooked stuff. A few small ideas I enjoyed: Have four backscratchers at the Poly bar and ride the Haunted Mansion and Splash when a bit drunk. Different experience! Near Halloween, Hallowishes is great from TOTW Lounge or roof of Contemporary, even if you have seen the normal fireworks from up there. The new Cali Grill is great. Enjoyed taking my Dole Whip from Captain Cook's out to Poly beach to eat while swinging on one of those chair swings. Have you ever sat and watched the big band in the GF play a full set? Spend some time walking around the Fort to check out the animals, woods, etc. Hoop Dee Doo...done that in the last decade? Sangria included. Parasailing in Bay Lake looks fun but expensive. Enjoy some of the entertainment at DTD instead of just walking by...try the classical band in the funny outfits.
 
Depending on how over-the-top you want to be, you might consider chartering the yacht for the evening for dinner and fireworks. We did it for our honeymoon - it picked us up at MK (a surprise for my husband). A magical experience. Really.

The AKL has night safaris that look really amazing although I've not done one yet.

It depends on what you are into:
sports: golf, fishing, RPDE, marathon, bowling, ESPN Club, WWS/ESPN Zone, etc
shopping: DTD, area outlet malls, large scale malls
drinking: Jellyrolls, Raglan Road, monorail tour of resorts, walking tour of resorts in the Boardwalk area
movies: DTD 24 screen theater some with meals served by waiters
night clubbing: Jellyrolls, Atlantic Dance, Raglan Road, Citywalk
resort tours: monorail tour of resorts, Boardwalk around the lake tour of resorts, AKL/AKV
offsite: Gaylord Palms Resort, Citywalk, swamp tour
 
Looks like many choices were mentioned. I like fishing and golf so I will suggest some details on that. Definitely a guided trip on WDW property is great. Also, just bring a pole and fish at the resort. Many have water near by. A guided shiner fishing trip off property is great option, too. You will need a Fl license for that.

Golf options are abundant. Take a lesson. Play on Oak Trail if you are a beginner. Oak Trail is a walking course with some very short holes.

Do the Driving Experience. Take a ride or drive one of the sports car. I have not done this but would love to.

Go deluxe sinning plan and visit all the top eating spots.

Imagination is what Disney is about.
 
Good suggestions, had thought about a few of the things listed as well as have done some of them in the past. Just had the backscratchers last trip, although did not do rides after! Nighttime safari I need to check on. We plan on seeing if the boardwalk tour will be going on when we are there. Possibly ft wilderness Segway tour as well.

Other ideas?
 
I'd love to hear more hidden/overlooked gems for those of us who have been so many times it's all memorized . . .
