2 Nights, No Parks - Suggestions?

I'm looking for suggestions for fun things to do around the World, without going into the parks. We are flying in to MCO on Monday, 8/4, around 4:30 p.m., staying at AoA in a Cars Suite for 2 nights. It will be DH, me, and our 2 sons (4 and 9 months).

We are Disney veterans (save for the 9-month old - first time), and as we have a trip in early December planned, we won't be activating our APs this trip, so thus no theme parks. This is just a fun little diversion before visiting family in another part of FL.

I know we'll definitely utilize the pool at AoA, and we have a dinner at Chef Mickey's booked for our second night. I'm sure we'll also hit DTD. What are some other things you might suggest that perhaps my mommy brain just isn't thinking of? My 4-year old is usually up for anything, and my 9-month old is fairly easy-going, as long as he's not tired. Appreciate any and all suggestions!
 
We're doing the same-ish thing this time. We often go to Disney, and we've always gone to the parks. This time, though, we'll be in the area to visit with friends who are getting married. We're going to stay on-property, but our big trip too is in early December. :) We will visit the waterparks on one day and maybe go into the MK for one afternoon to see the new Fantasyland, but we're mostly planning on hanging out at the resort. I'm thinking we'll visit the pool, playground, and we're also doing one of the pirate cruises for the big kids. Couple that with an evening out (the kids are doing a clubhouse) and I think our schedule is going to be more than full.

Have you checked out the offerings at Ft. Wilderness lately? I think they've added a few new things, or maybe that's just stuff we never got around to doing before, too. They have pony rides. There's also campfires, minigolf, carriage rides, ice cream on the Boardwalk, those little bicycle carts, as well as just resort-hopping for meals and/or sightseeing. Even a boat ride would be fun, maybe?
 
We did this on our recent trip...we had a fantastic time at Fantasia Gardens mini-golf! We also spent lots of time wandering around DTD and just soaking up the Disney atmosphere.
 
*Go to the Boardwalk
*Since you're going to DTD take a boat to POR/FQ. I love the beauty of those resorts.
*Ride the monorail. Get off at Poly and watch Wishes from the beach.
