My parents, both about 60 years old, are going to WDW in late Jan. They say they only want to go to Epcot, but want two days for seeing it. Would it be better to just get single park/single day tickets for them, or can 2 day tickets be found anywhere for a bit better price?

It sounds like park hopping is out, so you're best deal will be to just get 2-day/2-park tickets. On allearsnet.com, they suggest that the price for 1-day/1-park tickets are $58.31 (tax included) and 2-day/2-park tickets are $111.30 (tax included). I don't think Disney sells these types of tickets in advance, so you'll have to get them there.

Awhile ago I seem to remember WDW having a "bounce back" type of ticket. IIRC, if you were there for one day and decided to do a second day, you received a discount. It was only available at the parks. Maybe someone who is more in the know will post or perhaps you can check with WDW guest relations.

I believe they do this. I remember seeing something at Epcot back in April where you could add a second day for a certian amount. Of course I just got married and with the AHHHHHHHHHH of Disney, I am surprised I remembered anything. Lol.
