Let your eleven year old pick what she would like to do. Love one on one parent child trips to Orlando. Have a blast. Have done many shorter one on one trips with my son over the years. His two favorite parks then and now that we almost always do are 1) SeaWorld (great park and less expensive than Disney) and 2) Magic Kingdom (He always likes to end any trip with the classic Disney park.) We usually on our trips have three park days and for the third vary from the remaining Disney parks (like them all - often pick based on what we haven't done for a while) and Universal (when we do that we usually get the park to park ticket). All the theme parks in Orlando are world class and you really can't go wrong with any of them.
With just two days you really don't get much of a discount on a Disney two day ticket and being off Disney property too that opens up your choices to any park in Orlando.
We usually don't do a hopper at parks, as there is enough at any of the parks that we like to enjoy a full day. Also, park hopping takes extra time that you aren't spending at the park moving between parks. With a rental car or uber though it's pretty quick.
In all our mini trips we only did a hopper one time on a two day/three night in Orlando trip with one day at Disney, and on our Disney day we spent most of the day at MK and then hopped to Epcot pretty late and only had time actually to do Soarin, Test Track, and see the night time show (Illuminations). I had never been on Soarin before back then and DS (so sweet) thought I would love it and wanted me to experience it. He had suggested a hopper with our spending most of the day at the MK and then just going to Epcot to do a minimal number of things before closing (wasn't really much time for experiencing Epcot - all the countries, wandering around, etc. the way we did it, but very fun to cater to your kid).
