2:00 Chef Mickey adr

We have a 2:00 Chef Mickey adr on arrival day. We planned to head to MK afterwards. Will they start breaking down the buffet while we are eating? Not sure what to expect with an adr so close to the last brunch reservation time. We've never done Chef Mickey, yes I know the bad reviews but I know my kids would LOVE it.
