I have ADR's for 2pm at Tuskar , Crystal Palace and Biergarten. If it takes ages to be seated, and we move into dinner window, will I be charged higher dinner price? or are you charged for time you enter?

You should be charged the price based on when you check-in. So as long as you're checked in before "dinner" time starts, you should be fine.
In most cases, there is a break between the "lunch" and "dinner" seatings. At the three venues you listed, the lunch seating general ends around 3:00 pm and dinner doesn't start until closer to 4:00 pm. So if your ADRs are for 2:00 pm, unless something is drastically wrong, you won't still be waiting to be seated after 4:00 pm (that'd be a two hour wait!).
Thanks Figment! I also just realized that my credit card has already been charged..... which should have answered my own question. I guess my brain is frozen up here in the "Great White North" -27 today brrrrrrr 43 more days!!!!!

Did you already eat there or are these ADRs coming? If you haven't eaten there yet, you shouldn't have been charged yet. As far as I know, none of these restaurants require pre-payment of the meal...
