Looking at trying our 1st signature restaurant, myself, DW, DD 8, DD 6, DS 1. Would love some suggestions. My 1st thoughts were Cali Grill, Flying Fish, or Yachtsman.

I think CG is a good choice for a first Signature. It doesn't have the best food a Signature can offer, but it doesn't have the worst either. It also tends to be a little louder than most Signatures, even later in the evening, so you won't feel much out of place with the little ones and with the view of MK, it should make for a nice way to break into the Signature side of things.
I'd say California Grill for your 1st signature restaurant. While I prefer the food at Jiko & Citrico's the experience at Cali Grill is hard to beat. There's a great view of the MK & being able to see the fireworks w/ the sound piped in would be a lot of fun for your kids (and you
Yachtsman. I love the food, atmosphere and the service is fantastic. The food at Cali Grill is very good, but it's SO loud in there and our waitress wasn't very nice.
We've been to all 3 on your list multiple times and the choice for us would be Flying Fish, HANDS DOWN. In my opinion the best restaurant on property. Cali Grill is good and you can't beat the view, but for overall quality it's Flying Fish.
I would also recommend Jiko at Animal Kingdom Lodge, especially with young kids, you can go out to the Savannah before and/or after dinner and view the animals, my girls have always loved it.
been to all 3. Flying Fish has the best food, California grill has the best view but worst food and Yahtsman is good the FF is by far the best meal. FF is so much better I go there for steak rather than CG
