1st Child-Free Trip in 15 Years! Need Fine Dining Advice!

So hubby is taking me for a quick, 2-3 day trip for my birthday, without the kids! :banana: First time I have been to Disney in about 15 year with kids!! So, needless to say, we have only eaten at child friendly restaurants. So please send me some of your favs! Thanks for your help! :love:
 
1) We prefer

. . . innovative dishes with flair
. . . overall great value
. . . relaxed and soothing dining atmosphere
. . . behaved and somewhat quiet patrons

2) The only sit-down restaurants we patronize at WDW are
. . . Bistro de Paris
. . . Citricos
. . . Il Mulino
. . . Shula's Steakhouse
. . . Victoria & Albert's
 
My favorite dining experiences, most of which are signatures:

1) Citricos - amazing food, amazing service. I would HIGHLY recommend for your birthday dinner. I've been three times and they made each visit like a special occasion.

2) Flying Fish - great food, and a great steak if you don't like fish! Very good service.

3) Jiko - amazing food, not overly impressed with the service but it wasn't bad.

4) bluezoo - excellent, really fresh fish, and wonderful service. Also very easy to get an ADR for (probably because they are not on the DDP). Get the chef's tasting menu! It's five courses of yummy surprises!

5) California Grill - I list this at the bottom because the atmosphere isn't what you would call romantic or quiet. But I think the food is still great. Service can be spotty though. You will see more kids here than the other signatures.

6) Sanaa - LOVE this place! It's not considered fine dining, but I absolutely adore the place! Best non-signature restaurant IMO. Wonderful, interesting Indian-inspired food and great service, with one of the best views in Disney!
 
Did 20th Anniv. trip this past Nov. with no kids. How relaxing!! Our favorite restaurant at Disney is Artist Point. Very underrated on these boards. You will also find better food and an adult setting at Swan/Dolphin area. Bluezoo is terrific as is Il Mulino. Shula's argueably the best steak on property, but absolutly the best steakhouse feel. On BW Flying Fish is fantastic but can get loud during normal dinner hours. Prefer early dinner there. Enjoy the trip:thumbsup2

My top five at WDW are Jiko, Citricos, bluezoo, Il Mulino and Flying Fish (Shula's and Artist Point are also very good). Did V&A on a trip last week and it was great, but not a restaurant I would plan to return to on a regular basis.
 
Tops for us, in order, are:

V&A
bluezoo
Il Mulino
Bistro de Paris
Flying Fish
Citricos
