1900 Park Fark... closing time for breakfast vs. when they stop refilling buffet?

If the posted "closing time" at 1900 Park Fare for breakfast is noon, how long do they keep the buffet stocked with fresh food? I see they offer an ADR time as last as 11:50am and we'd like to eat as late as possible for breakfast, but I also don't want to pay for the buffet if they stop adding fresh food to it starting at noon, you know what I mean.
 
We had an 11:30 reservation last Saturday and were there until 12:40 (based on my timestamped pics). The last trip I made up to get food was probably 12:20ish and there were a few things that had definitely recently been put out (I specifically remember this because at around 12 there were a few things running low/empty and I was momentarily worried since breakfast was ending, but they had replaced it shortly afterwards). There were still plenty of people in there eating when we left.

Last seating and closing time are almost never the same for restaurants.
