When making ADRs, I know the 180+10 means if I have an on-site stay, I can make ADRs 180 days from check-in for up to 10 days. What if you don't have a hotel stay that lasts 10 days? Can I still make an ADR for 10 days from check-in?

No you can make it 180 plus the length of stay, with 10 days being the maximum (meaning if your stay is 14 days you can only make 10 days to start).
 
I believe you can only schedule ADRs for the length of your stay or 10 days, which ever is shorter.
