Geoff, it sounds like a great trip. 14 days is awesome. But you should go to the link below and read up on fast passes. At all the parks except MK, there are tiers for FP's. Some rides are Tier 1 level, some are Tier 2 level, etc. I see in your plans where you have more than one Tier-1 level pick which you wont be allowed to do when the time comes to pick your FP. The link below is to a great sticky which will tell you everything you need to know about FP and which ones you can group together at each park. Cheers!

also read up on which rides actually need fastpass. I don’t even think there’s a fastpass for the lightning mcqueen show at DHS and if there was you wouldn’t need it. Same goes for dumbo, which is an easy day of fastpass. You wouldn’t need a fastpass for Monsters Inc at MK either and magic carpets also has lower wait times throughout the day.

14 days is a long trip. We did 13 once and by day 10 our kids were wondering if we were "ever going back to Texas?"

It looks like you're doing a good job of including rest days and going easy.

Wow lots of questions answered pretty quick in that post thanks !!

Don’t FP Dumbo! My kids love the play area there and it’s great for them to get to run free a bit. They actually get upset when there’s no crowd and they don’t have any time in the wait/play area, lol. We always do 2 weeks too and it’s great because you don’t have to rush around and you can really soak up the atmosphere and all those great Disney details. Just don’t push the kids past what they’re comfortable with (Iike don’t force them to see chRacters if they’re scared and let them rest if need be, don’t let them get hangry, etc.) and you’ll all be much happier. Maybe consider afternoon naps since you’ll be there so long. And have fun!

My only comment is to consider whether you really need the dining plan if you’re in club level or do you want club level if you have the dining plan. Not sure which hotel you’re at but There’s a lot of food available in the clubs. You can eat breakfast every morning unless you want a character breakfast. There are snacks and sodas all day long if you’re hanging around the hotel. And there are hot and cold apps at night along with wine and sodas and then dessert later which can really take the place of some dinners.

Unsolicited opinion about something you said (and mirroring what @cedricandsophie said above) - are you committed to the dining plan and CL? While valid for some, the general consensus is that most don’t find both CL and the Dining Plan on the same trip to be ‘worth it’ - generally speaking. You probably have your reasons why it makes sense for your family, just throwing that out there though.

Hi there

got a deal on the upgrade from a savannah view room to a club level savannah view for £400 for the 2 weeks. So it’s £7 each per day. We have decided that the club level will be used just for breakfast before we leave for the parks.

hi there

thanks for the reply, our thinking on club was the costs. We upgraded from a savannah view room to the club savannah for £400 for two weeks so works out at £7 Sterling per person per day, which when we worked out breakfast that our kids like to eat, toast and cereal etc and the beers and wine for the evenings it seemed pretty good value for us, as we would be able to use just the dining plan for lunches and dinners.

They look like they are traveling from the UK -- I'm in a few UK-heavy Disney Facebook groups and 14 day length stay is very very common for them.
