Pretty sure we'll get the DDP for our soon to be planned June trip

One DS is 11 years old. He is at that age where sometimes he wants to eat like an adult and sometimes he wants to eat like a kid.
Three questions:
Are TS kids meals restricted to 10 and younger?
And
If he wants to eat like a kid whether that is a kid meal or a simple dish, can we pay OOP for his meal, use the DP (normally as planed) for the rest of our party; therefore saving his adult credit for later use?
And
I assume there would not be a problem using his adult credit for a kids meal if we wanted to do that (even though the ticket say all adults)
For the last two I can't really see why Disney would care,but I'm sure if there is a reason someone will enlighten me.
