Soup recipe for Nancy
Takes no time at all and couldnt be easier!
Butternut squash and red pepper soup
de-seed and chop 2 red peppers
peel, de-seed and chop 1 butternut squash.
peel and chop 1 onion
Put it all in a saucepan
Add 2 pints of stock, s&p and simmer til soft..(any stock will do - I used vegetable)
Blend and............... voila! - soup!
I just added chunks of cooked caulifower to my bowl today as I had some left over from last night. I also added a few tiny gratings of stilton (strong blue cheese) to the top and let it melt. The amount I added wouldnt even be 1/4 of a point but it made a HUGE difference to the taste.
