JJsMama, Please don't worry about finding things to do in Mexico or anywhere else for that matter. With this group you will have a list to choose from. And joining everything or nothing is totally up to you.
Example: Our day in Cozumel started with a short ride to Eagle Ray Dives at a nearby marina. There were 10 of us, including the "Germs".

We spent the day diving and snorkleing. The boat was old, but the tour was well run. It included a stop for lunch, and drinks were provided on board. (Beer and soft drinks) We returned to the ship, showered and changed, got the kids settled, ordered room service for them for dinner, and went back ashore with my sister and her DH for some shopping. We found a small cafe, ordered 2 for 1 beer, and some Mexican munchies. It was a very relaxing evening. Ran into a few of our cruise friends while walking around. Including someone who had finished a rather large margarita.

We even got to see a couple leaving C&C in a hurry, as thier ship pulled out of port.
Then went back to the ship and joined the "sail away party". We are looking forward to both stops in Mexico next year. Glad your DH is starting to get interested. That does make it easier.
