1 Restaurant Per Area Recommendations

So, I ask you to recommend 1 TS restaurant that is a "must do" for you in each of the following areas (maybe recommend your star dish as well):
- Epcot
- MK
- HS
- AK
- Resort
- Springs

Epcot area: Flying Fish. Park: Chefs de France
MK area: Steakhouse71, Park: can't say I like any TS options (but have not tried BoG or skippers)
HS: Hollywood Brown Derby all they way.Suggested dish: The rootbeer -brined pork
AK: Satuli canteen is better than any TS I've eaten in the park.
Resort: Jiko (Filet, of course)
Springs: Polite Pig (FYI: I know Art Smith's Homecoming gets accolades - it was thought it was good but not worth the price).
