1 or 2 Day Park to Park

We have HRH reservations for Friday, Nov 11th (Veterans Day) and Saturday, Nov 12th. We definitely want to see and do everything in Harry Potter Land but as far as the rest of IOA and Univeral Studios, we will not do any rollercoasters or water rides.

Knowing all this, is 1 day enough to do both parks with an early morning entry or do we still need 2 days?.

My kids think 1 day is enough and would rather spend the extra day at Disney but I think the park closes too early and that we need 2 days.

Also, are Florida schools open on closed on Veteran's Day?

You can always purchase the one day one park base ticket and then upgrade if you decide to stay another day. You can do this at Guest Services.
 
If we do decide to stay only the one day, then I will cancel the second night at the HRH and add it to Disney so I have to figure it out before hand.
 
I think one day would be enough if you truly will not see the rest of IOA. With early admission you should be able to see everything in WWoHP before lunch. If you do a quick counter service for lunch and use the express passes at US, I would imagine you could see quite a bit in the afternoon. Now, you may not be able to see EVERYTHING in US. But I'm guessing if you're not doing roller coasters at IOA, then you won't go to the Rocket or the Mummy
