1 day (with EP, end of March) enough?

Friday at end of March- possible to see all the Harry Potter stuff in one day with Express Pass? I would say hands down yes until I remember “Spring Break”. I’ve been twice in mid November with express pass and we did everything we wanted easy in one day, but crowds were obscenely light both trips. I’m thinking to avoid potential concert crowds Mar 30 & 31 (presenters not announced yet) go Friday.

Staying RPR we would also have early entry. (I remembered from last time take photos and explore shops earlier in the day!)

The short answer is yes. The long answer is, HP will be crowded. You may have up to an hour wait for Escape from Gringotts, while you could ride 10 rides in the rest of the park during that time.
If you have only a day, just do it and adapt. Our last trip, we skipped EFG, but other trips we may have ridden it 6 times. (not sure if you are doing both parks, so only talking about US).

Unfortunately, pretty much every school system I know of is off the first week of April, which means folks will probably take Friday the 29th off and head down.
