1 Day Trip (Anything New since Nov. 2015)?

My fiancee and I are non-Florida resident Annual Pass holders (we live in Charleston, SC), we each work 2 jobs and RARELY our schedules line up so that we have a single FULL day off together (unless we go out of our way to request vacation time). It just so happens that we both have TOMORROW (Saturday Feb. 27th) off and we are gonna make a mad-single day dash down to Disney after we both get off work tonight.

Long story short, our last trip to Disney was last Thanksgiving (Nov. 2015) and we just wanted to know has there been any notable new additions to any of the parks or the WDW resort area in general since then... or any single-day tips in general (although we have done this a handful of times before - we are non-Florida resident Annual Pass holders after all, any chance to spend a day at Disney we jump at the chance - this is our first time doing this since joining the DIS forums and would like to get any tips and suggestions from the other forum members here)!

Epcot has a great new 4D attraction called Disney Pixar Short Films that opened in December. No fast pass needed. Soarin closed in early January. Hollywood Studios has Symphony in the sky Star Wars fireworks nightly, and a Jedi training attraction, and displays and characters from Star Wars.
 
Also Jungle Cruise Skipper Canteen in MK is open. They take walk-ins and reservations the morning of via the Disney website and possibly a separate special website that I can't remember. Flights of Wonder in AK is down for refurb.
 
We were there in September and just went last week. The newest things seem to be at HS, with two new Star Wars short films, the Star Wars fireworks, and meeting Chewbacca and Kylo Ren.

We saw the Pixar film at Epcot. It is cute, but not worth a separate trip to Epcot unless you really like going to Epcot for another reason.

Here is what I would do in your situation:

Spend the morning at MK and eat lunch at Skipper Canteen. Head over to HS and see the new Star Wars attractions, watch Fantasmic, and see Symphony in the Stars. That about covers it for new attractions.
