Pumpkin Cookies

1 cup sugar
1 cup canned pumpkin
1/2 cup shortening
1 tablespoon grated orange peel
2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon cinnamon
1/4 teaspoon salt
1/2 cup raisins
1/2 cup chopped nuts (I use walnuts)

Heat oven to 375 degrees. Mix sugar, pumpkin, shortening and orange peel. Stir in flour, baking powder, baking soda, cinnamon and salt. Stir in raisins and nuts.

Drop dough by teaspoonfuls onto an ungreased cookie sheet. Bake until light brown, 8 to 10 minutes. Immediately remove from cookie sheet, cool.

You can also ice them if you want to with Light Brown Glaze:

1/4 cup margarine or butter
2 cups powdered sugar
1 teaspoon vanilla
1 to 2 tablespoons milk

Heat margarine in 1 1/2 quart saucepan over medium heat until delicate brown. Stir in powdered sugar and vanilla. Stir in milk until smooth.

I assume they do a photo every year? How much do they charge you for that?

They do. On previous cruises they were free. It was one of the gifts. This year, they gave us a card for a free 8 x 10 picture from Shutters. Needless to say, I did not pick the group photo. Did anyone get a copy?

Well we are still here. Been busy this week at work, no short days. I really need to find another IT Job that pays as well with less hours.

Anyway we decided not to book the MV of the Fantasy. Looks like way too much money for not that much importance to us. We are considering booking the Western Carribean the next week following since it is a bit less money.

Hope everyone is enjoying their Thursday, I am getting ready to go teach for this evening.
