Stars--they're just like us!

Sat next to Mariah Carey at Yachtsman Steakhouse for dinner one evening. Had a body guard about the size of my car! LOL.
 
We were in the Wishes FP area on our July trip and Kobe Bryant came in with his family.
 
We sat at at a hibachi table at Teppanyaki with the three kids from 8 Simple Rules and their VIP guide circa 2005. We struck up a conversation since they were literally sitting at our table. They were staying at AKL. I was in the CP at the time and Kaley Cuoco asked me what resort they should transfer to because AKL was too "kiddie" for them. Ok.

They also complained to their tour guide that they didn't know they had to pay for their meals.

Over the years, we saw Green Bay Packer Reggie White jogging on a treadmill at BWI, were on a boat to EPCOT or HS with Eddie Van Halen, saw Lorenzo Lamas in the lobby of the BC.

When I worked at BW in 2005, I saw Peyton Manning, Eli Manning, Joe Theismann, Kelly Preston, Laura Dern and the singer Ryan Cabrera.
 
If anyone here runs Disney marathons or 1/2 marathons, there is a very good chance you will see Sean Austin. He is an avid runner, and is in nearly all the events. My mom has seen him twice.
 
In 2014 when Neal Patrick Harris was narrating the candlelight processional we ran into him and his family so often I thought we were traveling with them all week. all 4 parks, everytime we turned around they were either getting on or off the ride and on 2 occasions we ate at the table next to them.
 
We ran into Melissa Joan Hart (Clarissa Explains It All and Sabrina the Teenage Witch) in September. My daughter loves her and ran right up to her and hugged her. She was SO sweet! She had all three of her boys and one plaid with her. She joked that her husband was "sick" in the hotel room. Then she said he was actually watching a big football game. They're big Crimson Tides fans. I really enjoyed meeting her! She was a doll!

I have never seen a celebrity at WDW or DL. I would probably not even freak out because I work in Guest Relations for Anime and Science Fiction conventions. You don't freak out around the Guests of Honor is the first rule of that line of work.
 
We were eating at V&As Chef's Table one year, and ran into Ed Asner while waiting on our table. He was there doing the holiday readings at EP. Talked for a while about this and that until we were seated. Also ran into Vincent D'Onofrio from Law and Order Criminal Intent in the AK. Just said hi with some small chit chat before a CM came and escorted them to whatever they were doing next. As the OP said, they are just people- and any time we meet someone 'famous' we treat them like anyone else- as they just happen to have a job that provides more exposure than most, but doesn't make them any different than the rest of us.
 
I could have run into celebrities right, left and centre, judging by this thread, because of the list of people other people have seen, I've only heard of a handful, and would know well enough to recognise less than that!

you sign up through the castmember HUB. The year I was around it was a lottery. THen once you get your spot you sign up for as many shows as you can a minimum of three
