Lauren & George's Wishes Wedding- 12.01/16- WP/Attic *Updated 11/06: TR Day 6!

I love that bouquet! I've never thought of doing something like that before! My best friend had a brooch bouquet, and it was beautiful but that thing was heavy!

I also love the view from that wedding location, so beautiful! And the Mickey balloons are adorable!
 
I absolutely LOVE your decision to move the ceremony outside. It will be amazing. I am all for outside weddings! And I love your centerpiece idea. Yay for vintage posters! Also, we only had 23 guests but we still chose to do assigned seating just to make sure it wasn't awkward or anything when trying to find a seat..just a thought! :)

Thank you! I'm so glad you love the idea! I'm definitely super happy to be having an outdoor wedding too! I'd never envisioned getting married inside. I do think the Wedding Pavilion is beautiful and I absolutely won't be disappointed if we get moved inside due to bad weather, but in the end, it still does kind of remind me of a church, which is not what I'm going for at all. AND now that we aren't inside, we also get to switch from the organist to a violinist, which I also love so much more. As far as the seating arrangements go, since we're at the Attic, the seating is split between indoor and outdoor seating and I want to give guests the option to choose where they'd like to sit, rather than forcing someone either inside or outside. If it were all indoors then I probably still would have done assigned seating.

I've been lurking :rolleyes1 I think Picture Point is beautiful, but haven't seen any ceremony photos. I can't wait to see yours! And I love the Attic and the vintage boardwalk idea. I'm about 99% sure if we did a DFTW, we'd do the Attic for the reception. I plan on picking up some extra park maps on my Disneyland trip next month (ahh it's June now, so I can say next month!) to try the park map flowers - I'm going to do paper flower bouquets, and I want to mix a few park map flowers into it. Can't wait to hear more!

PS. I :love: your dresses (in all pictures) and your engagement pictures were adorable!

Definitely agree about the Attic! That's where our rehearsal dinner was and its so casual up there assigned seating wouldn't make sense. I forget what time your ceremony is but it was so cold that night of ours. (Dec 6th). No one wanted to sit outside!

Our ceremony is at noon and reception starts at 1. December in Florida can really go any way...it may be super hot or it could be chilly so we're just going to have to wait and see. But as long as its a sunny day, then it shouldn't be too bad since all of our events will take place during the day-time. Unless I can finally convince DF on that damn Dessert Party, which he doesn't want to do :(

Planning Session Menu Tasting Selections

Our planning session is exactly one week away! I can't believe that at exactly this time next Monday, I'll be sitting in Franck's meeting with Kristie and Catherine for the first time to go over the details of our wedding! So, so excited. And since we all LIVE for Disney food, I thought I'd share with you lovely ladies what the DF and I chose for our cake and menu tasting. I'll start with cake first since we're doing our planning session first, and menu tasting afterwards.

Cake Tasting Selections
Cake Flavors: Almond, Chocolate, Marble, and Orange
Cake Fillings: Amaretto with Almond Crunch, Chocolate Hazelnut Crunch, Raspberry Mousse, and Orange-Scented White Chocolate

So without ever trying any of these cakes before, my top choice and one I'm most anxious to try would be Almond with Amaretto Almond Crunch filling. I've had almond cake with amaretto filling in the past and it has always been super moist, flavorful, and delicious. I also think its a great neutral choice that all of our guests will love. George is also totally on board with this flavor combination, as long as we both like it at the tasting. We're also excited to try the chocolate with hazelnut crunch because Ferrero Rocher chocolates are our favorite! The chocolate cake with raspberry filling was not something I originally had on my list to try because I'm not usually a chocolate cake fan, but I knew I wanted at least one choice with a fruit filling and when I saw how much Amanda raved about how much she loved that option, I added it to the list! Finally, George chose the orange cake with orange-scented white chocolate. I personally think it sounds disgusting and we're 99% sure it will not be a cake that we choose for our wedding, but George just loves the orange and chocolate combination so much that I agreed he could try it. I don't think many guests would like that combo so much either. We do plan to choose a different flavor for each layer (we're planning on a 2-tiered cake).

Menu Tasting Selections
- Brown Derby Cobb Salad with Red Wine Vinaigrette
- Yukon Gold Potato, Applewood Bacon and Gruyere Tart
- Sleepy Hollow Sweet & Spicy Chicken & Waffles
- Crab-topped Mahi Mahi with a Light Citrus Butter
- Seared Angus Beef Fillet with Drunken Cherries, Savory Brioche French Toast
- Gourmet Macaroni & Cheese Bar
- Gourmet Mashed Potato Bar
- Banana Chocolate Bread Pudding with Pina Colada Sauce

Our lunch reception will be buffet-style, which I think is the only option at the Attic anyways...we would have done a buffet either way though because plated is much too formal for our liking. We're planning a build-your-own-buffet, but I think we will end up customizing it even more so than suggested on the pre-planned menus. For one, I really don't think that two salad choices are necessary, so we plan to cut it down to one to save money. Yes, we've both tried the Brown Derby Cobb Salad before and we love it, but I'd still like to try it at our planning session, just to make sure its the same cobb salad we know and love. If not, then we'll probably just choose a basic Caesar.

For our side items, we are tasting a whole lotta carbs. Lol. The Yukon Gold Potato, Applewood Bacon and Gruyere Tart was a must for me since it combines pretty much 3 of my favorite foods into one tart. We also decided we want to try the gourmet macaroni & cheese bar AND gourmet mashed potato bar due to so many rave reviews from so many other past and present Disbrides. Like many others, I'm sure we'll cut it down to our favorite choices and then just combine the two into one bar, but for the planning session, we will try it all and then cut down our choices. Yes, that's a carb overload, but who wants to try seasonal veggies when you only get to try 8 things? I'm sure we'll have them at the wedding, just so that we have something other than pasta and potatoes, but I'm not wasting a tasting selection on them :)

For our entrées, we're super duper excited to try the sadly now retired Sweet & Spicy Chicken and Waffles from Sleepy Hollow Refreshments. This was one of our all-time favorite meals from Disney and we knew we wanted to have the chefs recreate it for the planning session. If it tastes similar to what they served at the Magic Kingdom (and its not outrageously expensive) then we will serve it as part of our buffet at the wedding. The rest of our choices are inspiration from fellow Disbrides Rachel and Amanda! First up, the Crab-topped Mahi Mahi with a Light Citrus Butter Sauce. We knew that we wanted to try a light fish dish to serve to guests, and the mahi mahi was our first choice. However, this dish is normally served with a curry sauce and when I saw that Rachel chose to serve it with a citrus butter instead, I decided to go that route as well. Finally, I HAD to try the Seared Angus Beef Fillet with Drunken Cherries after reading Amanda's planning journal. It sounds and looks amazing. I am a little hesitant to choose a fillet for the wedding, since I hear they tend to be served tough when its a buffet-style wedding, but I at least have to try this option. Its so unique and I think will be terrific. I'm all about serving unique, unforgettable Disney food to my guests.

While we don't really plan to serve any additional desserts other than cake, DF saw the dessert lists on the menu planning checklist and his eyes nearly popped out of his skull. George has a MAJOR sweet tooth so he asked if we could choose just one dessert to try and I said yes. We both really love bread pudding, so we agreed on the Banana Chocolate Bread Pudding with Pina Colada Sauce. It sounds awesome and very different from your standard cakes, cookies, and ice cream. On a side note, we just went ate at Ohana' for the first time last weekend (sacrilege, I know) and now George wants to request that bread pudding instead. Omg, so good, but I think we're going to stick with this choice for now because it sounds so interesting. I told him if we end up adding a second dessert and this one isn't amazing, then we can consider asking for the Ohana' bread pudding instead.

I can't believe I just wrote this much about food that I haven't even tried yet. I literally feel like a psycho now, but I feel like descriptions are necessary when there are no photos. Come next week, there will be photos. Glorious food photos. I. Can't. Wait.

We had a steak but it was sliced in front of everyone so they can choose how it is cooked. I know that adds more but I enjoyed having the action station. Even though I have no pictures :(

Thanks, Rachel! I'm so looking forward to this and will try my best to take lots of pictures. The fillet is supposed to be an action station as well...we will see if we can keep it as that once we get our BEO. I will post back next week on how the PS went!

Our DFTW Planning Session!
Good evening ladies! I'm fresh off my Planning Session with DFTW so I figured I'd update now while everything is fresh in my mind. Since we're local, this obviously won't be a trip report, but I may split this up into two posts (planning session and menu tasting) depending on how long they get. So without further ado, lets get started!

Our day started off at 9AM at Franck's, where we met our planner, Kristie for the first time. She's super nice and I pretty much felt completely comfortable within minutes of meeting her. We started off by walking over the the Wedding Pavilion/Picture Point to go over how the chairs would be set up, where we would walk in from, etc. Every time I see Picture Point I get more and more excited that we made the decision to have our ceremony here. Its so incredibly beautiful and intimate. It will be so perfect for our small group. Only 5 and a half more months until we will be standing up here in front of our loved ones.



Timeline:
After checking out Picture Point, we went back to Franck's to go over our photography timeline for the morning of the wedding. Here's what our timeline will roughly look like (we obviously still have to confirm all of this with our photographers too):

10AM- Getting ready/room pictures
10:30-11:15- Bridal, bridesmaids, and immediate family portraits at the Boardwalk
11:15- Leave the Boardwalk for the Wedding Pavilion
11:45-12:00- First look pictures with George at the Wedding Pavilion <3
Wedding starts at noon!

Transportation:
We then discussed transportation, which we honestly hadn't even thought of at all before it was mentioned. We decided for now that we're going to go with the limo for us and if we need to cut costs later on then we will either switch to a van or town car charter.

Ceremony Details:
Next we went over all of the details for the ceremony, which we don't totally have 100% figured out, but for the most part. Kristie was able to switch out the organist (which we would have had if our ceremony was in the Pavilion) for our choice of either a guitarist of violinist. We chose the violinist. The violinist will play a medley on instrumental Disney songs before the ceremony starts as guests are arriving. We are also getting the pretty white folding lawn chairs for our guests to sit in at no additional costs. Yay! Ok, so the parts we aren't too sure on yet are the processional. Our officiant will walk in first, followed by George, and then his groomsmen. My bridesmaids will then walk in, followed by me escorted by my dad. We decided to have our bridesmaids and groomsmen to walk in separately because of potentially awkward pairings. Lol. George's dad is his best man (he's 60 and a bigger buy) and my sister is only 27 and very tiny. They would just look so funny walking down together. Also, George's sister and brother are both bridesmaids/groomsmen and I'm sure they would rather not walk down together either. Just makes things easier in my opinion.

As far as ceremony music goes, George and his groomsmen plan to walk down to the Star Wars theme song, of course. I'm still undecided on what me and my bridesmaids will walk down to, but I'm thinking "At Last I See the Light" from Tangled for me. I love that song. No idea on the bridesmaids. For our recessional, we're doing "Power of Love" by Huey Lewis and the News because we're big Back to the Future fans! I hope the song will translate good on the violin. Haha.

After the ceremony is over, our guests will stay for family photos and then George and I will take some alone inside and around the Pavilion as well. For our actual exit, we will be doing a bubble send off, and then its off to the Boardwalk!

CAKE:
Best part of the planning session, am I right? Yup. So, I won't go into crazy detail here, but we tried little pieces of each cake flavor with each icing and we had a clear winner....Almond cake with amaretto crunch filling! Hands down. We liked all the other fillings too, except the orange, as predicted. Didn't like that filling at all, however, the orange cake was actually amazing. Very moist and light. It paired really well with just plain buttercream AND the amaretto crunch. I also really liked the marble cake with chocolate hazelnut filling, but George just thought it was alright. The chocolate and raspberry was ok too, but we didn't love it. To recap, here's all the flavor combos we chose, as well as a sample piece of cake, which is how the cake will be presented to our guests.



So what did we choose?!? Almond with Amaretto Crunch for our bigger, bottom layer and Orange cake with Amaretto Crunch for our smaller, top layer. YUM. And as far as cake design goes, we decided to keep it simple to keeps costs somewhat down. We were originally going to do a Haunted Mansion or attractions-themed cake, but we're now going to just do the allover Mickey stamps in our wedding colors (purple, mint, and grey) on a two-tiered Mad Hatter style cake. We will order one of these toppers off Etsy.

Floral:
As we were finishing off our cake, our floral coordinator, Sarah, came in to talk to us about floral. Again, I'm not going to go into crazy detail here since I already did a floral and decor inspiration post last week and we pretty much showed her everything from that. We discussed ceremony decor first, which we plan to do like to picture below. Shepard's arches with buckets of flowers in lavender, pink, and white with some greenery. We also plan to add a light sprinkling of petals on each side of the aisle, if budget allows.



We will also have some multi-colored Mickey balloons waiting for us in the Wedding Pavilion to use for photo-ops afterwards because I need that little touch of fun and whimsical.

Next we discussed reception decor, which is pretty much what I discussed in my last update...different types of small jars and vases with coordinating flowers and wildflowers in our colors for our guests tables. She's also going to look into getting us the multicolored paper straws to go with the Boardwalk theme. We're also incorporating some Mickey balloons into the reception decor and will bring the buckets of flowers from our ceremony to our reception and place them on our sweetheart table. We also discussed doing either a striped tablecloth in our wedding colors (if available) or a mint sequined tablecloth for our sweetheart table so that it stands out a little more. We'll see how much that actually costs. Finally, we chose what colored napkins we want, which we chose in lavender and mint.



Thats pretty much it for floral. It was more than we had originally thought of, so I'm sure we'll be doing some cutting in this department. I'm not really sure what to expect in terms of pricing, but I guess we'll find out in about a month.

Reception Details:
The last thing we went over before our PS was over was our reception details, including our timeline, entertainment, and bar options. Since our reception is at the Attic, we are not having a DJ, just doing an iPod hookup. We may provide our own speakers since its $500 to use theirs, which is crazy in my opinion. My bridesmaid, Meghan, will act as our MC and will announce us as we arrive at the venue. Here's the timeline we decided on for our reception:

1:30PM- Start of ceremony
1:30-2:00PM- First dance/Father-daughter dance and toasts
2:00-3:30PM- Lunch
3:00-3:30PM- Cake cutting with Mickey and Minnie
3:30-4:00PM- Mingle/End of ceremony
4:00-5:00PM- Photos with George on the Boardwalk (we added an extra hour for after the reception since we don't have a cocktail hour)

For entertainment, we are having Mickey and Minnie in their purple formal wear. I'm so excited, but nervous because I think my mom will kill me. Not only because she thinks M & M are childish, but she knows how expensive they are and she's not going to be happy. I'm planning on keeping them a secret, but I might have to tell her ahead of time so she can get angry with me before the wedding and be over it by the time of the wedding day. Since we're not doing dancing, we're going to have them join us for the cake cutting.

The last thing we talked about was our bar, which after much back and forth, we decided on BOC. We were just going to do beer and wine with a possible signature drink, but Kristie told us that its no additional cost to add liquor to our beer and wine bar so after much consideration, we're going to add call liquor to our bar instead of a signature drink. None of the signature drink options really appealed to us anyways.

That's pretty much it for the Planning Session. The 4 hours went by in a flash and we should be receiving our BEO in about 4-6 weeks (EEEK). We had a little over an hour before our menu tasting, but we of course had to get a picture in front of Franck's before leaving.



And drink some fancy DFTW water.



And one last look at our not-too-shabby backup location just in case the weather sucks on our wedding day.



And of course this update took WAY longer to type out than I imagined so I'm going to have to leave you hanging until tomorrow for the Menu Tasting :P Sorry ladies, I'm beat after this very long day.

Haha I'm so excited that my PS report was worthy of a computer re-boot! And thank you! I was hesitant at first, but now I'm so, so excited for our ceremony! And Mickey and Minnie are non-negotiable for me. They will be there even if I have to cut all my floral. Haha. I'm prepared for the rolling eyes of my parents and other guests who don't get Disney like we do. Yes, that cake is the stuff of dreams. I have a feeling we will be ordering many more for anniversaries to come.

Thanks, Jenn! Kristie was incredible and we're so happy to have her as our planner! She's so super helpful too. I get more and more excited every time I see Picture Point too! I think it will be perfect! I was nervous about our colors at first, especially since there isn't too much floral that goes with mint and grey especially, but I have faith that Disney will wow us! And I'm so excited to see how our cake will look too :)
 
Menu Tasting Session

Alright, I know the real reason why you are here is because of the FOOD, so I guess I've kept you waiting long enough. After our planning session, we headed over to the Boardwalk Convention Center, where our menu tasting would take place. This was our first time ever going into the convention center at the Boardwalk and it was so beautiful! Definitely the nicest convention center I've ever seen. We still had a little bit of time before our tasting started, so we just hung out in the lobby for a bit and caught up on some social media (its been a whirlwind couple of days for us here in Orlando, so there was lots to catch up on). Right at 2:30, Kristie arrived and we were escorted to our own private room for the start of the menu tasting. See?

As we walked into the room, we saw our table with lots of fancy napkin folds, as well as how the place settings will be set up at the wedding. We didn't choose any of the pictured napkin folds though because since we're doing colored napkins, they aren't as stiff as the white ones, so we need to stick to a flat fold, which is fine with me.

Next, we were introduced to our waiter (who's name escapes me right now) and we got to choose what our wait staff will be wearing on the day of the wedding. I believe our choices were either a white jacket or a less-formal gold vest. We went with the gold vest, which our waiter said he was very thankful for because the jacket is so hot. We also met with our chef, Chef Redgie and the head chef for the Boardwalk, who's name I also can't remember because I'm terrible. Everyone was great and super friendly though!

As you can see in the background, we did opt for a buffet set-up, so I'll first show you all of our menu tasting items from the buffet stand-point and then what they looked like once they were prepared. Be prepared, don't go any further if you're hungry!

Ugh, I'm seriously so full again just looking at these pictures, but everything was so, so good! The first thing we tried was the Sleepy Hollow chicken and waffles, as advised by our chef because he said that the waffles tend to get cold pretty fast. Fine by us! This was easily the dish we were most excited to try since it was our only park-inspired dish that we requested. Our chef said that this dish would best be served as an action-station, since most guests won't understand it, but we haven't decided what we will do yet. It obviously all depends on the cost. Here's what our meal looked liked after Chef Redgie assembled it for us:

Omg, it was SOOOOO good! So spot on with what they served at Magic Kingdom and a definite yes for the both of us! I love that the chefs can make a theme park food like chicken and waffles look so beautiful and classy. I can't wait to eat this again on our wedding day!

Next was the Hollywood Brown Derby Cobb salad. With the exception of the salad not being chopped like it is at the Brown Derby it tasted great and this is the salad that we will be serving. I think its great because our guests will be able to make whatever kind of salad they desire. We only had the red wine vinaigrette dressing at the tasting, but we will also be adding a ranch so that our guests can choose a creamy dressing as well. Sorry, forgot to take a picture!

After the salad, we were ALL about trying that mac & cheese and mashed potato bar! I skipped out on trying the normal mashed potatoes because I didn't want to get full, but I was dying to try the purple Peruvian potatoes and the mac and cheese, so that's what I loaded up on. There were SO many toppings to choose from that I was a bit intimidated, but I believe I had sour cream, cheddar cheese, chives and bacon on my mashed potatoes, and lobster, pancetta, and prosciutto on my mac & cheese. George just opted for brown sugar on his sweet potatoes as that was the only sweet option that was included of the toppings.

We both LOVED the mac and cheese (especially with the lobster) and proclaimed that it was a must for our wedding menu. That was one of the most creamy and flavorful mac and cheeses I've ever had. 2 thumbs up! I also really liked the purple Peruvian potatoes, but wasn't crazy about the sweet potatoes, which George and I agreed were pretty bland.

Next we tried the Crab-topped Mahi Mahi with Lemoncello Butter Sauce and the Yulon Gold Potato, Bacon, and Gruyere Tart. To me, this was a perfect meal. I absolutely loved the mahi mahi and the potato tart was amazingly delicious.

At this point, I was getting incredibly full, but we still had one more entrée to try...the highly anticipated Angus Filet with Drunken Cherry Sauce and Savory Brioche French Toast.

I'm not sure whether I was just SO full or I just loved the other two entrees so much, but I didn't love this one as much as I wanted to. I definitely didn't think it needed the French toast with it. I liked the cherry sauce, but I wasn't sure if I loved it on the steak. Overall though, it was a solid dish and George really liked it.

Our final item to try was the Banana and Chocolate Bread Pudding with Pina Colada sauce, which I believe I forgot to take a picture of. We're huge bread pudding fans and this did not disappoint. It was absolutely delicious, but we ultimately decided to not add it to our menu because it is a pretty heavy dessert after a big meal and wedding cake. However, Kristie did mention that we could get BOC Mickey ice cream bars and George's mouth dropped. Mickey bars are his favorite and he was so excited when she told us this was an option, so we will be adding these to go along with the wedding cake :earseek:

After the tasting was over, we sat down with Kristie and discussed what items we were going to choose for our menu. These are the items that we will definitely be including for our wedding:

- Build-your-own Brown Derby Cobb Salad (with additional ranch dressing)
- Sleepy Hollow Inspired Sweet and Spicy Chicken and Waffles (most-likely build-your-own as opposed to the action station)
- Mac & Cheese Bar (though we paired down the toppings to just a few, since having so many options was overwhelming) For our toppings, we chose toasted bread crumbs, lobster, bacon, chives, and sautéed mushrooms
- Seasonal grilled vegetables (which we didn't try, but will offer for those who want some color on their plates)
- Potato, Bacon, and Gruyere tart
- Angus Beef Filet with Drunken Cherry Sauce on the side (minus the French toast, since we're already serving chicken and waffles) We're also going to add a red-wine demi glaze on the side for those who don't want to try the drunken cherry sauce
-BOC Mickey Ice Cream Bars

I REALLY wanted to add the mahi mahi as well because it was such a great dish, but George really wanted to do a chicken and red meat, rather than a chicken and fish. We've kept it on the menu for now, but I doubt we will be able to afford to keep it. We shall see. Kristie said that she can have this dish prepared just for me at the reception if I really want it, which is a nice gesture and I'd love to have it, but I think a lot of our guests would really love it too (especially my dad).

After finalizing our menu with Kristie, Chef Redgie presented us with an awesome parting gift! Such a sweet gesture from them. I also have a little pro-tip for any future Disney brides with a planning session coming up. I bring this up because had George not brought it up, I would have NEVER thought of it since we weren't in a typical restaurant setting, but if you feel like your server did an exceptional job, then please feel free to give him/her a tip. We had a lovely experience and we tipped him $15, which he seemed to really appreciate. I only bring this up now because I don't think I've ever seen anyone else mention about tipping their server during the menu tasting and I just thought it was a really nice gesture.

And just like that, our planning session and menu tastings were over. It was a long, exhausting day, but I came out of it feeling more and more excited and less anxious for our wedding day! Although I am anxious to get our BEO and how much stuff we're going to have to cut, I'm confident that Kristie will help us stay within our budget and do the best she can to help us. She was also super kind enough to offer another sit-down session with us since we are local to go over the BEO with us once that's ready, so I'm sure we will take advantage of that too. I hope you all enjoyed my menu tasting recap and I hope I didn't make anyone too hungry!
