ideas needed for potatos

    Hello. I have a 10lb bag of russet potatos. I was suppose to start my low carb diet but I need to use up these potatos . We are a family of 3(2adult 1pre-teen). A 10lb is a lot of potatos for us but the price was good-lol!

    ideas so far but would like new ideas too....

    -french fries
    -mojo potato
    -mash potatos
    -lipton onion roasted potato
    -bake potatos
    -hash browns


    How do I make potato wedges. do i just cut in halves abd bake???

    for myself I will be following portion control for my diet. Dh and dd will not

    You can still have potatoes on a low carb diet, you just have to watch your portions.

    I make potato wedges like this...

    wash potatoes well, but do not peel. Cut large potatoes in half and then each half into 3, smaller potatoes can be cut in half or 4 pieces total. Put in a large bowl and toss with a bit of good olive oil, coarse salt, pepper, minced garlic and fresh rosemary (feel free to use another herb or a mix of herbs).
    Mix well to coat and place on a flat pan (sheet cake pans work well) that has been sprayed (this does make a difference). Make sure potatoes are in one layer and roast at 400-425 degrees for 15 minutes and then gently flip to brown the opposite side; cook until insides are soft and surfaces are browned.
    the length of time depends on the amounts and type of potatoes.

    We also make "smashed browns" - a recipe I got from Chuck's Day Off...

    place 4 or 5 large potatoes plus 3-4 peeled cloves of garlic in a pan of salted cold water and bring to the boil, cook until just fork tender--DO NOT over cook. Drain and gently break potatoes/garlic, but do not mash (you should still see chunks of potato). In a heavy frying pan (I used a lg cast iron frying pan) melt some butter and add some olive oil to prevent burning, when mixture sizzles add potato/garlic mix and turn to coat. Cook, undisturbed for a few minutes and turn to brown all sides, season with salt & pepper and enjoy!

    You can also make flavoured mash - add mustard, pesto or whatever takes your fancy! And if you don't want to eat them all at once, mash freezes really well:thumbsup2 I quite often make more than I need and freeze a portion or two for when one child needs to eat at a different time. You can also use it to make cottage pie (which again freezes well)

    You can make a batch of the Blue Bayou Restaurant potatoes, they are yummy. I know I got the recipe from the DIS some time ago, but you could do a search and find it.

    I bought some extra virgin olive oil (accupunture Dr. said i need a teaspoon before eating) SO I HOPE I CAN USE THAT FOR THE WEDGES

    Did know those can be frozen. Thanks for the tip!
    I've never been to Blue Bayou. ANyone have a picture or can someone please describe it to me thanks

    The Blue Bayou potatoes are like scalloped potatoes in a cream sauce, with garlic. I don't have a picture, but I have made them a few times :)

    I only use extra virgin olive oil (cold or cooked).


    Au Gratin Potatoes - Blue Bayou, Disneyland

    Ingredients:
    Potatoes (baking) 3 lbs, peeled and thin sliced
    Onion, thin sliced
    Cream Sauce for the Potatoes:
    Heavyu Cream 2 cups
    Whole Thyme (dry) 1/4 tsp.
    Fresh Garlic (chopped) 2 tbs.
    Salt 1-1/4 tsp.
    Pepper 1-1/4 tsp
    Butter 1 tbs.
    Parmesan Cheese (grated) 4 oz

    Method:
    1. Mix onions and potatoes and put into baking dish. Mix cream, garlic, salt, pepper, and thyme leaves.

    2. Pour mixture over potatoes and onions and cover.

    3. Put in a pre-heated 350F degree oven, and bake for about one hour.

    4. When potatoes are tender, remove from oven and sprinkle with parmesan cheese.

    5. Put back in the oven uncovered and bake for ten minutes more until brown.

    sounds pretty yummy. I havent used heavy cream before but i've seen at the store. Do i just use a spoon to mix (cant remember the other tool i use to mix) or do i need to use a mixer to make the heavy cream thicker? This is one recipe that i cant wait to try:goodvibes

    Just stir it in - you only need to whisk it for desserts where you need volume.

    Whilst not in the top ten from culinary perspective champ is an option , potatoes , spring onions and milk, Irish I believe

    It is indeed Irish! Or mix mashed potatoes with cooked cabbage, shape into patties and fry in butter for bubble and squeak. lovely with sausages and onion gravy:goodvibes

    Or boil until cooked, crush roughly with a fork and stir in pesto, lemon juice and olive oil and serve with grilled chicken or fish. Yummy!

    I love potatoes (so much!)

    A simple way to make potatoes is just to fry them up on the stove. Add a little olive oil and a little oregano and fry (at low) until softness is desired. I could just eat these up...

    Also for mashed potatoes, always add a little parsley! MMMMM!

    Also, I just remembered...

    I love cutting them up, adding a tablespoon of butter and then wrapping in aluminum foil. Add some parsley too!

    Then put on the grill!

    Soooo good!
