Eat at Home 3!

Hi Friends, haven't been on the Dis is AGES! All the changes just spooked me, then I had some really great Disfriends who started getting bullied on here. We have still been eating at home. Several major changes came for us, though....

1. hubby got his college degree (finally!)
2. then he got a new job, after working for the same company for over 12 years
3. we are doing the Dave Ramsey Financial Peace University...which means all Disney trips were canceled, until we get out of debt. :-(
4. and finally....I found out I have celiac disease. no more gluten for me.

This week's menu...

Saturday:
Sausage and Pepper Pasta (GF Pasta)
GF Garlic Cheddar Biscuits

Sunday:
Shephard's Pie
Salad
GF Peach Cobbler with Vanilla Ice Cream

Monday:
Veggie Noodle Stew (GF Noodles)
GF Cornbread

Tuesday:
Apples and Pork Chops
Baked Sweet Potatoes
Veggie

Wednesday:
Black Bean Burritos (Beans and brown rice intead of burrito for me)
Chips and Salsa

Thursday:
GF Sweet and Sour Chicken
Brown Rice
Broccoli

Friday:
Sloppy Joe Fritos Pie
Fruit
 
I have been failing so badly when it comes to eating at home. My back and hip issues have been getting worse so standing to cook has been just about impossible. I really need to just buy a stool to keep in the kitchen so I can sit and chop/cook/whatever. Then maybe I can get back into actually cooking my meals because I LOVE to cook... but I just hurt too bad.

Here is my meal plan for next week though and I plan to stick to it!
Sunday: Coconut Curry Shrimp
Monday: Hot Turkey Sandwiches, roasted squash
Tuesday: Meatloaf, mashed potatoes, green beans
Wednesday: Leftovers
Thursday: GENCON!!!
Friday: GENCON!!!
Saturday: GENCON!!!
Sunday: GENCON!!! (Eating out at Fogo de Chao with friends)
 
A little late this week

Tonight - pork chops, homemade Mac and cheese, broccoli
Friday - Chili, cornbread
Saturday - chicken Caesar wraps, pasta salad
Sunday - kielbasa, sauerkraut, potato salad
Monday - leftovers
Tuesday - Chicken fajitas, rice, Mexican street corn
Wednesday - Grilled veggie paninis, fries
Thursday - Chicken cordon blue casserole

Menu Plan Week of Aug 1

Saturday - lobster tails, grilled fish, broccoli, corn, tomato/cucumber salad.
Sunday- out of town
Monday - frittata (peppers/spinach)
Tuesday - grilled chicken and peppers, zucchini w/mushrooms, and corn on the cob
Wednesday - leave for long weekend at the beach!
 
I need to get back into eating at home. These past few weeks have been horrible. I have been working too much, it has been HOT, and it has been making me lazy.

This week I am trying to use up items from the freezer/pantry to save some money

Tonight we are having breakfast for dinner; pancakes with bacon and fruit

Tomorrow I work an open to close (10-9:30) so I am putting beef stew in the crockpot

Tuesday I close, so dinner will be leftovers

Wednesday will be ham slices with potatoes and zucchini

Thursday will be spaghetti with turkey meatballs

Friday and Saturday I will be out of town.
 
Here is my menu for the next week. Hopefully I can keep up with it this time around.

I work a 10 hour day tomorrow so it will be leftover potato soup.
Saturday: Asian chicken and vegetable foil packets, rice
Sunday: Leftovers
Monday: Pizza (vegetarian)
Tuesday: BL no T and fruit (I can't eat tomatoes lol)
Wednesday: Leftovers
Thursday: Spring rice pilaf with vegetables, kale, and cheese
Friday: Leftovers
Saturday: Striped bass with mushrooms, rice, and asparagus
Sunday: Egg Fu Yung and rice
 
Sunday: Sloppy joes, pasta salad, fruit salad
Monday: Brats, beans, mac and cheese
Tuesday: Steak, mashed potatoes, corn
Wednesday: Chicken, stuffing, potatoes, cranberry sauce, rolls
Thursday: Jambalaya, bread, pineapple
Friday: French Toast and Sausage
 
Sunday - filet, roasted potatoes, sautéed spinach
Monday - grilled brats, pasta salad, beans
Tuesday - beef tacos, Spanish rice, Mexican street corn
Wednesday - chicken Alfredo gnocchi bake, salad
Thursday - Dinner out
Friday - shredded bbq chicken sandwiches, sweet potatoe fries
Saturday - Dinner out - away for the weekend
 
Love this as it is much needed in my home right now. Our out to eat and throwing wasted food out has gotten to be beyond the point of ridiculous. We are self imposing a pantry/fridge/freezer clean out. Gonna go through it all tomorrow while my son is at school to make a meal plan.

Tonight I did a quick peek through and found a lonely pack of ground beef, a container of already chopped bell pepper/onion mix, a bottle of salsa, a package of cheese that needs eaten soon and multiple packages of tortillas in the freezer. Sounds like a burrito/taco night to me ;)

I am going to try to be better at this, but with the DH helping cook, it doesn't always go the way that I want it to - also, we have the tupperware microwavable pressure cooker on its way on friday so we will be using that alot, as well at the steam cooker

Monday: Hotdogs/brats, corn, mac and cheese
Tuesday: Pancakes/Bacon
Wednesday: Tilapia, baked potato, salad
Thursday: Ham and scalloped potatoes
Friday: Pizza
 
Tuesday is leftover day since we do our grocery shopping that day (DH gets paid on Tue) and it's OT day for DS.

  • Saturday -3 Pepper Pasta with Crispy Pepperoni

We usually also have a green smoothie with dinner instead of a salad.
 
Got a chance to go through the freezer/pantry today. The rest of this week will be:

* Tuesday: Baked chicken with scalloped potatoes and corn
* Wednesday: Grilled pork chops with roasted red potatoes and green beans
* Thursday: Dragon noodles
* Friday: Grilled steak with eggplant gratin
* Saturday: Out for MIL's birthday

Friday - Homemade pizza, any leftover fruit/veggie on the side
Saturday - Chicken noodle soup casserole

Sunday - Pork chops with rice & carrots
Monday - Refried bean tostadas with lettuce & salsa, rice
Tuesday - Chicken nuggets, potatoes, corn
Wednesday - Breakfast for dinner: eggs, pancakes, fruit
Thursday - Rice & beans with corn tortillas
Friday - Beef stew and rice
Saturday - Pork fried rice
