Any recommendations for DH and I while the kids do a pirate cruise on our last morning? We will be having breakfast with the kids earlier that morning, and will not have park tickets.

Maybe a swim without the kids, walk around the boardwalk, not sure that you will have time for mini golf near the Swalfin.
If Teena the greeter is on duty that day, visit with her in the lobby!

Well, we are back from a wonderful stay at the Beach Club. I booked a room during the room discounts and was only able to book a standard room. I requested close to transportation and a full balcony... we were on the 4th floor all the way at the end of a long hallway and had a small balcony. My first reaction was disappointment, but after a minute of selfishness I got over it. I figured if I wanted an upgraded room, I should have paid for it. LOL. It ended up not being bad. The elevators move at super speed, so it doesn't matter which floor you're on, you'll get there in a jiffy. My 3 kids enjoyed racing and jumping down the long hallways. None of us minded the walk and we really enjoyed the room.
It was a chilly week, but we did get one hot day and really enjoyed SAB. My kids (and my hubby and I) enjoyed the slide, lazy river, and hot tub! After, we roasted marshmallows. Yum.
We had wonderful dining experiences. We ate breakfast every morning at Beach Club Marketplace. The coffee was delicious and I used my rapid refill mug every morning.
Lunches were varied depending which park we were visiting. We did score a Be Our Guest fastpass for lunch and we loved it. My 10 year old (still on kids dining plan) loved the Mickey meatloaf. He said that was his favorite meal. I had the turkey sandwich and thought it was delicious.
Our dinners were amazing. First night at Tutto Italia in Epcot, second night at Captain's Grille, third night at Arkeshus princess dinner, fourth night at Cape May Café, and fifth and final night at Sci-Fi Diner at Hollywood studios. All of our meals were so delicious. We had great food and great service at each place.
We had a wonderful vacation. Thank you for all of your help along the way.
My final thoughts... if you are staying at this resort, upgrade to the park hopper. The 5 minute walk to Epcot was so nice and the 15 minute walk to Hollywood studios was great. The buses were okay. Getting picked up to go to the park was never an issue. The only issue we had was waiting for a bus at Animal Kingdom. I felt like we waited forever for a bus to come. It was in the middle of the day, so I bet they didn't have many buses going at the time.

Park hopper is so important when staying at the Beach Club or any EPCOT resort!
Hubby and I are currently staying CL in the BC from Jan 31 - Feb 6 to celebrate our 45th anniversary!!! However, I am really second guessing our choice! It is about $30 per day for the same Lagoon or pool view at the YC. Should we switch? Balcony, room view and proximity to the lounge/elevators is really important to us for this trip! Any construction is a problem because we expect to spend a lot of time relaxing in the pool, on our balcony and at the lounge. Also, we expect to sleep late most days.

Deciding on resorts in WDW is the best worst problem to have, isn't it?
I can certainly understand wanting a full balcony and the YC is the best way to achieve that.
It sounds like you have a WV room booked. If you are in a BC CL GV room, or can switch, I believe all of those rooms have full balconies and nice views, although not as pretty as a view of Crescent Lake or SAB. With the renovations to the lounge and rooms, I would consider that.

When we have stayed on property elsewhere we have and requests have been granted.

Sorry about your disappointment with the pool rehab. The good news is that 2/3 of Stormalong Bay will remain open. Although I haven't personally experienced it, I think the work is well hidden from guests.
From what I have read, the resort does not pay attention to faxed requests. The best thing to do is to add your request to your reservation by contacting CRO (Disney's Central Reservations Office) or having your
travel agent do it if you booked through a 3rd party.
