I was never rushed during my own solo trip last September but that is notoriously one of the slowest times of the year and because I'd booked only about 6 weeks out most of the TS meals I got weren't at peak times. But some of them were during very busy lunch hours (50's Prime Time at 12.30...oh dear lord!) and I never once felt rushed and in fact the only time I did wasn't even at Disney but over at the Darkside. You have just as much right to be at a nice restaurant as a family so if you feel like the staff are targeting you because you're solo then just finish you meal and have a word with the manager.
I think if I'd been there at a busier time and I could see that there were many people waiting for a table I'd get my butt moving but that would be a personal thing. If a CM tried to rush me no doubt my inner teenager would come out and I would slow myself right down (unless they were really polite and nice about it, then I'd do the British thing and apologise for taking so long and then rush to get out of there even though I'd only been there for 45 minutes and I hadn't actually finished eating )
