Today is Meatless Monday and I have to tell you that we have not missed a week since we started this at the beginning of the summer... So I think we are in a habit now...

Tonight is homemade veggie egg rolls, egg drop soup and Fried Rice...



I also made Vanilla Ice Cream today, the full of sugar and fat kind... It tasted so good right out of the mixer...

There are allot of crock pot cook books. I use mine allot. Try experimenting you might surprise yourself...:thumbsup2

With all that snarkieness going on, I didn't realize you were such a good cook! I suppose with your husband's illness, you have even more of challenge to make tasty dinners! It's not hard to believe, I just didn't expect it until you started posting such tasty recipes.

Last night we had homemade burgers and tater tots. It was really good, but we ate so late that it was tough to enjoy it.

I'm still on the fence for dinner tonight. My choices are sloppy joes, canneloni/manicotti, probably a few others from the freezer, I could even make the John Wayne Casserole and follow Brandi's meatless Monday idea!

DH is making Baked potatoes, coleslaw, cheese and baked beans for dinner tonight.

I also ruin things in the crockpot, I usually just use mine to keep things warm.

Okay, I believe you believe you cannot cook. I think that we do have some pretty basic every day recipes if you want them. None of us started out cooking like PIO or Becky or Brandi or Glynis.

I am a really simple cook. I can make complicated recipes but I don't. My family is not overly fond of them and I tend to "Nanatize" everything anyway so simple s better.

If you tell us a little about your family, what they like to eat and the time you have t make a meal we can help. I think that casseroles are a lifesaver for a busy person!

Dinner this weekend was Summer Food! I have to get back to watching my diet so this weekend was grilled cheeseburgers and steak fries on Saturday night. WE had Kady and that was her pick.

Tonight we had sauerkraut and fried hot dogs. Buddy's pick. I also made a chocolate pudding cake

1 box chocolate cake mix
1 box cook and serve chocolate pudding
2 cups milk
3 eggs
1 bag chocolate chips

Cook pudding and milk according to directions
put cake mix and eggs in bowl, add chocolate pudding and mix until smooth
13*9 in pan
top with chocolate chips

350 for about 25 minutes

My Mom used to make this, I make it when I miss her
 
Ann - There is kangaroo meat. It's a game-y tasting meat that is chewy if overcooked. So most of the time, it is served rare.

Kangaroo bacon is something that Kimmar and I spar about every so often.

Bacon in Australia is middle bacon. It includes the rasher (belly bacon) that American bacon is made of as well as the loin (back bacon) like Canadian bacon. We don't cook our bacon until crispy like the American bacon; rather it is cooked until there is a caramelisation on the meat. It tends to be tender; rather than chewy.

This looks so good Pio. I would love to sit down to this for dinner. Very interesting about the types of bacon you have. I love Canadian bacon and prefer it over American bacon. I am very allergic to nitrates so bacon has to be nitrate free for me.

....you don't wanna know :crazy2:.....but you get a sudden urge to BOUNCE right after you eat some!

WFD- Rosemary chicken, fresh asparagus, baked potato dessert is a half of a papaya with red raspberries.

the cake sounds very moist and I love that you make it when you think of her.

My MeMe (Grandmother) used to make these apricot fried pies, using dried apricots, and frying them in cast iron skillet in butter, these things were amazing and I burned my mouth every time, because I could not wait for them to cool off.

I would love to make them, but have no idea how? She passed away in June of 1989 and I miss her everyday.

My making fried green tomatoes tonight ended with a 2nd degree burn on my wrist! On the positive side, DS loved the ones I cooked before splashing hot grease on my arm. :)

I ended up making canneloni and manicotti. They were already made and in the freezer.

Do you share your recipe for these? I am still looking for a great manicotti/canneloni recipe. We had so many family members who made these from scratch and I never learned.

It's Wednesday night here. Dinner at mum's. About the only bright spot over the last 2 days. I've been sleeping lots and taking it easy. This cough is not going away and I'm just so over it! I'll be heading over to pick up doggie bags for DS, DH and myself. We're in a very busy period at work, home and life.

As far as the manicotti, I actually used the recipe on the Barilla Pasta boxes. I think it was to saute mushrooms, onions and spinach and add ricotta.

As far as the cannelloni, I mixed beef, mild italian sausage, mozzarella grated and then stuffed it inside the pasta tubes. I used a red sauce on top and baked it with some provolone put on in the last 5-10 minutes. As far as the sauce it depends on how tired I am whether I actually make it from scratch or just "nanatize" and jarred sauce.

Tonight we did McDonald's drive through on our way to band. :crazy2:
 
Alison - I would be :crazy2: too; after all those great meals you've been cooking. But at least it is convenient.
