The What's for Dinner Thread- June 2012 (recipe index in OP)

Hello from Radiator Springs, AKA Art of Animation Resort WDW! :woohoo: Got here a little after 1:30am, 12 hours and 53 minutes after leaving my sisters house in VA. And only 3 stops for gas with a detour during one for "real" food from MCDonalds.

My vacation started with a real bang, just a few minutes from my sisters house the big storm started with a huge gust of wind. Thankfully, with all of the dust and debris in it, I saw it coming and was able to keep control of the van when it hit. When I got to my sisters their electricity was out but they were one of the first neighborhoods to get theirs back about 13 hours later, another area of the development is not slated to get theirs back until Monday.:scared:

The girls swim team had a meet Saturday morning, strangely that area of the neighborhood did not lose electric. The big tents they use for lining up the kids for their heats ended up in the pool along with lots of leaves and tree limbs. The funniest thing is that a lot of parents had set up pop ups around the pool area with only a few being damaged and none ending up in the pond next door, however the canvas top of one ended up on the Clubhouse roof about a quarter of a mile away. :eek:

As we drove South we saw more than 100 electric company trucks headed North, most in groups of two or three but several large convoys of 10 or more.

Oh well, have to head off to the gift shop, girls are impatient and ready to hurt me for being on here. See you all later.

This was earlier. Having issues posting. Since then we've played in the arcade and gone to the pool. Waiting now to go out to dinner.
 
Morning, all! Today I am making chili for dinner. I am not, however, making cornbread to go with it this time, much to Scott's chagrin, lol. I am doing really well, though. My tight jeans I have to lay down to zip up now slide on. Woo hoo! Also, my denim dress pants I wear to church that are a wee bit snug slid on yesterday as well. Woo hoo!

I hope I haven't offended you and if I did, I apologize. :flower3:

Nah, it's all good. If I ever seem testy about the coffee stuff, chalk it up to me having to deal with my brother-in-law, whom I've griped about many times before. He's made me a bit defensive about drinking coffee in general. But no, I was not offended at all!!!!! :hippie:

DInner is grilled chicken that I did not cook yesterday. I am getting sick of chicken!
 
Morning all,

We are totally burning up here on the plains. We haven't had rain for over a week and 100+ temps EVERY day with 75%+ humidity. It is just horrible here. I feel so sorry for anyone that has to be out in it. I have seen work in the morning and late at night. It is just to hot during the afternoon.

Stephanie went back to work today. She was not looking forward to it. We are staying with Lilly this first week just to help her transition back. Doug is with her today and tomorrow and I will go Thursday and Friday. I feel so sorry for her. That is why I stayed home with my babies. There is NO way I could ever leave them. She has a wonderful job that will afford her to do some work at home, so that is why she is going back. Plus her daycare lady is a real sweetheart. They will all be ok, it is just hard for now.

Alison ~ How is Fran feeling? I sure hope she heals nicely and is up and around soon.

Nan ~ I have said it before and I will say it again - I am so proud of you. You are doing a great job with your diet. Good for you!!

Happy Monday everyone!

We got back yesterday afternoon from St. Louis, MO. WOW, it was HOT! The realtor who was showing us rental properties kept apologizing and I finally told her, this is nothing for us. ;)

DH's interview went really well and he's supposed to hear from them by Friday this week (normally would be earlier, but because of the holiday). I also got to see my school as well, and I'm pumped more than ever. I cannot wait to start next month (totally weird saying that)...

Anyways in the mean time, we'll be packing like mad men and we're supposed to leave AZ July 24th and start moving into one of three places we have on our radar July 26th. Yes, it is a bit of odd timing but these gracious landlords were more than willing to work with us.

I had to do a mega grocery shopping trip at both Costco (what a zoo!) and the regular store. All set for the 4th!

We survived our crazy weekend. Fran was up and atem the day after her surgery. She went in for a dressing change and then we went to Sam's Club for a could hours picking up groceries to feed the band at rehearsal Saturday. All I did was make some platter up with roast beef, turkey, and ham. We had sliced cheese, tomatoes, lettuce, pickles and onions. There was chips and dip, potato salad, cake and cookies. Oh yeah, and four ki ds of bread. I didn't cook anything, but it was still exhausting!

The next day we gave our concert in the park. I think it went over pretty well. I had organized a dinner at the Chinese restaurant around the corner, but Fran was just too wiped and went home to put her leg up. We are at the doctor's office right now. We are waiting for them to remove the dressing and treat her (if they are going to).

WFD? No clue, but since we've eaten out for the past two nights, I know it will be something at home.

Dinner was grilled chicken, steamed broccoli and salad. Corn on the cob for Buddy and Kady. Lots more errands tomorrow and 4 batches of wine to get started. Marisa and I made one today so we are on our way!

Yes it is. The Cars section is just like Radiator Springs and has all of the characters, the Cozy Cone Motel, and some other reall cool stuff.

The Nemo sections has the Big Blue pool and characters. It's supposed to make you feel like you are really in the ocean.

Lion King and Little Mermaid are the last sections and will be finished in the next month or so. I am hoping that we can at least see LK as it is the next section to open.

I will post pictures as soon as I am home. I am using my DN's laptop and can't put them on here.

Thank You!!!!!!!! Because we are DVC we are reluctant to spend money at any WDW resort, but we really want to stay in the Radiator Springs section after all the things we have heard about it. The family suites are pricey since there are only two of us, but I'd love to see pics!
 
Morning, all! It's leftover chili for us today. It's too dang hot to cook! Everyone sound off: what is supposed to be your high today? Ours is pleasantly low- 94 degrees with a chance of showers. Ahhhhhh!

Pigletgirl ~ good luck on the move. What part of St. Louis are you looking at? We lived in Ballwin, went to church in Manchester and my Daddy's office was in Clayton.

As soon as I get off of work I am headed to Kearney. We are spending the night tonight as their big fireworks are tonight at the park and then I am watching Lilly on Thursday. So you all have a great 4th of July. I will see you all on Friday.

WFDT ~ Grilled chicken, roasted potatoes and a fruit salad. I am taking it with me so it will be ready when Marty and Stephanie get home.

Tomorrow we are having ~ Beef brisket from the smoker, baked beans, pasta salad, marinated veg. salad and cheesecake.
