Hey y'all, don't be worried if I'm not around much this entire week. My employee has been off since last Thursday and was to return on Wednesday of this week. She just called and circumstances beyond her control may cause her to be out all this week, which means I'll be working all week alone which will carry through the weekend and early next week.:scared1:

Bethany, we may have to re-schedule our bean cooking, I'll know more by the weekend.;)

Marisa they did change me to Levaquin & I made the appointment but they can't take me until August 27th!

I have been on Levaquin for 10 days and have another 5 to go. It's healed up that cyst pretty much but I still cringe to use such strong antibiotics.

Please continue prayers for my DSIL. They kept her over night again, still do not have answers. They are doing more test today. When I called last night my DB said they were trying to get pain under control with IVs but she was really uncomfortable. :sad1:

I am frustrated for her that they don't have answers on where the pain is coming from. :hug:

FYI.... I HATE insurance companies!!!!!

So they added Emma and changed all of our coverage effective dates to her birth day now, so I have claims rejecting all over the place from my maternity. Just a headache and a pain to deal with. :headache:

They are a nightmare. It took months for me to get my last hospitalization handled right.


I think we're heading to Taco Tuesday tonight. DH loves it and quite frankly, I don't feel up to cooking. It's $3.33 for 3 tacos, beans, rice, and fresh tortillas. Can't beat that!

Yum... I have some sauerkraut that needs to be used. the only thing I do not have is the dressing. I will add it to shopping list. Have you ever tried boneless thighs with this? I love white meat and DH prefers dark.

Well I am home again and this time I have no plans to leave anytime soon. We had a great couple of days at camp. Ethan had a ball and so did I. It was so much fun seeing all of this through his 5 year old eyes. So cute!

But I do know why the Good Lord blesses us with children when we are young. I am POOPED!!!!

There is NO way that I will ever be able to read back and catch up so I guess I will just jump in here and do my best from here on out. My thoughts and prayers are always with you all.

WFDT ~ Meatloaf, cheesey green beans and roasted Ranch potatoes. Real comfort food for us. I usually don't turn the oven on in the summer but tonight will be an exception.

I am so glad to get me back in a routine. I am sooooo a girl that loves a routine.

I know what you mean about being pooped. Shhhhhhhh, having two little ones is alot harder than I thought at 40 years old. I keep saying they are going to keep me young and in shape I hope.
 
I am soooo sleepy today. Went to bed at a good time last night but kept having to get up. :headache:

Dinner tonight will be Tilapia with polenta cakes and some sort of veggie. Not sure if I want zucchini, again, or something else.

Here's the Kahlua Cake recipe.

1 box chocolate cake mix
1 C. sour cream
1/2 C oil
4 large eggs
1/2 C coffee
1 4oz package chocolate pudding
1/4 C Kahlua
1 12oz package chocolate chips

Combine cake mix with all but the chips. Beat at high speed for 3 minutes. Stir in chips. Turn into a greased and floured 10" bundt pan and bake at 350 for 50 to 60 minutes or until cake tester inserted in the center of the cake comes out clean.

Glaze:

1/2 C butter
1/4 C sugar
1/2 C Kahlua
1/4 C coffee

In a medium saucepan, over med-low heat, stir all ingredients together until melted and smooth. While cake is still warm, and in the pan, pour 2/3 of of the glaze over cake. (I ended up poking holes in the cake so it would absorb faster) Cool and invert onto cale plate. Pour remaining (re-warmed) glaze over teh top of the cake.

Since I had yogurt for breakfast and cheese for lunch, I decided creamy corn chowder might be pushing the dairy limit for the day. Between raindrops, I grilled some bratwurst, and I served it with sauerkraut (for me), pasta with butter/chive sauce (for the kids) and baked apples.

Hey y'all, I've had a good day today. I think it's because I feel good enough to realize & appreciate that I don't have to do a thing! :laughing: I sat outside in the recliner & read all day! Then I came in & took a bath with some fancy bath products DD gave me. :cloud9:

Sheryl- only 1/3????? I have zero self control, that baby would have been long gone and I would have been eying a brownie ;) Keep letting your family pamper you and you will be back on your feet sooner rather thatn later!

I did not cook last night. I forgot that Buddy had a dentist appointment so he dashed out when the office called. I was helping Welby bottle wine so we would have been late before even starting. Buddy got back in time to cork the bottles. This was a merlot, I liked it but was alone in that, it was robust in comparison to the others she has made. We are heading to the wine store today, she is going to show me how to make my own, I want to make a reisling and a pinot noir.

Nan, I think all the fattening foods they've been cooking for me, has helped the sweet tooth. I'm craving veggies today & the eclairs aren't calling me! :confused3

Your own wine, that's cool! Is it hard to do?

Laura, I'm glad Liam's getting some playing time.

I didn't realize I still had enchiladas in the fridge. That will be supper tonight. I'm hoping the bagged cole slaw I had is still good, I really need some veggies. My throat is doing better & I'm able to eat pretty much anything now. Although I had a popcorn craving last night & that wasn't fun.

I've got to get off now, my hand is numb from typing.

I do want to thank all of you again, for all the love, prayers & good thoughts. I truly believe that it's the reason I am doing so well! :grouphug:

Ann- I just caught up and am so sorry to hear that there are no answers yet. Please know that I am thinking of your DSIL and will keep her in my prayers. Stay positive!

Nan--you must've sent some rain our way. I don't remember another July with weather like this. It's been in the 70s in the afternoons (which in unheard of in Arkansas) and then we're getting lots of rain too. Oh well! Better than the 100s we were having. My MIL will be here until Friday. We drop her off at the airport and then head out for vacation.

It has been pouring all day here. One good day and then this! I know that you all have had wicked heat and know that is no better than the cold but I really want a few warm days this July. I was under a blanket this afternoon watching a movie with Kady.

I had bananas starting to turn so I just made a batch of banana bread! The house smells so darn good, reminds me of childhood. Well I did not have any walnuts :headache: so I put in chocolate chips. I will probably send one over to my DB's house, I am sure the kids will appreciate the chocolate chips more anyway.

I almost always add chocolate chips to my banana bread and my banaa oatmeal muffins

I am trying to come up with a label for my wines. I think your's may be better than mine. What do you think of "Mountain Mist"? We live on "the other side of the mountain" and whenever anyone talks directions here it always is "you go over the mountain" up the mountain....etc.

Welby new label is "Welby's Reserve". I am drinking a glass of her Merlot that we bottled last night. It really needs to sit a bit but it is really good. It is smooth and not too full bodied. Just right for my taste, I generally drink a Pinot Noir in summer and change to a red Zinfandel or a Sirah in winter. Last night the first sip was :scared: but the second was amazing! The wine guy at the wine store said that it needed a little air.

As to a road trip.................I am always in! I would like to take Kady if it is during the week if you don't mind.

Nancy -- You'll have to let us know how the winemaking works out. That sounds like fun to me.

Liam's team lost again last night...an ugly 11-3 affair. The good news in all this, however, is that Liam is getting more playing time. Liam played four innings at first base last night, and he had a really good hit to right field that scored a run and kept a rally alive. They play again Wednesday.

I bought the makings for a Pinot Grigio and an Italian Pinot Grigio. This one has a pink tinge to it but will not be a sweet wine like some of the Rose's that are out there. Welby is moving things and her friend is building us a wine wall so that we can store all our wines. They should be ready by Christmastime. Some need to rest once bottled but that is okay too. There is juice for an Ice Wine that I am going to try after the holidays. It needs a full year so I am waiting on that one.

I am so glad that Liam is strutting his stuff! It is too bad that his team is losing, that is rough on teh kids, but GOOOOOOOOOOOOOOOOOOOOOO Liam!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!! :cheer2::cheer2:

I get the young to have kids thing! I used to thank God when Buddy was home when we had Kady for a length of time. She had way more energy than I had and I welcomed the help! Now with Nola I have to admit I am tiored at teh end of the day. I love her and she is a good baby bt Holy Moly! Most days it is Nola 1 Nana 0

I know that with age there is experience but there is something to be said for young and energetic ;)

Anyone who visits and notices your home needs to be shown the door. You have more to do than clean and clean. I just got through telling Brian (Welby's DH) that if I could change anything I would go back and not make my family and me crazy over the house. He said that they are going on the weekends so they never get all of the inside chores completed. Enjoy your little ones if a few things go by the wayside :confused3 let em go! Maria and I will play with the babies and you can make us coffee and it will be fun!
 
Latest update....still no results on MRI :confused3, she is going to be there another night. DB said she didn't want visitors just rest.

Ive had " stuff " going on here.

Head aches have been a nightmare.

Ive had some issues with my eyes too so I had them checked but all is good.

I spoke to the Doc and she thinks its more likely my meds causing it.

This is a bummer because they are workin well on my original problem.

She thinks i should change but the stuff she suggested has possible side affects too........

Severe mood swings and ADULT ACNE !! :eek:

Im sorry but I'll stick to poppin the tylenol....Im just startin to " except " my

crows feet, aint no way Im addin ZITS !! :laughing:

WE enjoyed dinner this evening. I used Alton Brown's broiled salmon and served it with curried sweets and green salad for me, cucumber and onion salad for Buddy. Not a big dinner, Buddy tried to tell me not to coo because it was rainy :confused3 Translation: I know that there is still salami in the meat keeper......can I have a sandwich? :lmao:

Watch the time, I think I could have taken this out a little sooner. The reviews were mixed, the glaze is good but it is distinctive. If you are salmon "truists" and don't like gilding the lily this will not work for you but I love maple and bacon glazed salmon and this was similar, sweet but not really?

Broiled Sockeye Salmon with Citrus Glaze

Recipe courtesy Alton Brown, 2009
Prep Time:15 minInactive Prep Time:55 minCook Time:8 min Level:Easy Serves:4 to 6 servings


Ingredients


  • 1 side, skin-on, sockeye salmon, 1 1/2 to 2 pounds, pin bones removed
  • 1/3 cup dark brown sugar
  • 2 tablespoons lemon zest
  • 1 1/2 teaspoons kosher salt
  • 1/2 teaspoon freshly ground black pepper
Directions

Position a rack in the oven 3 inches from the broiler. Line a half sheet pan with aluminum foil and place the salmon on the pan.
Place the sugar, zest, salt, and pepper into the bowl of a small food processor and process for 1 minute or until well combined. Evenly spread the mixture onto the salmon and allow to sit for 45 minutes, at room temperature.
Turn the oven on to the high broiler setting for 2 minutes. After 2 minutes, place the salmon into the oven and broil for 6 to 8 minutes or until the thickest part of the fish reaches an internal temperature of 131 degrees F on an instant-read thermometer. Remove the salmon from the oven and allow to rest, uncovered, for 8 to 10 minutes. Serve immediately.
