Love this recipe... found it in cooking channel magazine
Zucchini fritters
Grate two small zucchini into a colander into the sink
Toss with two tsp of salt
And let sit for ten minutes
Squeeze out the liquid
Mix with four minced scallions
Parsley (1/4 cup each)
(dill) if you like
1 beaten egg
¾ cup grated parmesan
and ¼ cup of flour
pan fry spoonfuls of mixture in olive oil
flattening with spatula
3-4 minutes per side
drain on paper towels season with salt
