So what cookies did you bake for Christmas? I am on a baking marathon today. I am baking coconut macaroons dipped in chocolate, black and white cheescake bars, lemon coolers, wedding cakes, oreo truffles and almond bars.
 
I am doing my last batch today.
The rest are done and in the freezer awaiting Christmas Eve.
I have
chocolate chips
wedding cakes
Spritz
Peanut Butter blossoms
cut out cookies (almond flavored sugar cookies)

What are black and white cheescake bars? They sound good!
 
I baked:
Chocolate Chip
Peppermint Chocolate Chip (CC recipe plus crushed candy canes)
Jelly thumbprints
Spice/ginger cookies
Orange blossoms dipped in chocolate (not as sweet as sugar cookies but not as dry as shortbread)
Rainbow (venetians)

Also did chocolate covered pretzels, peppermint bark and toffee (the saltines version that was mentioned in another thread earlier today)
 

My family always has:
Chocolate chip cookies
Spritz (my specialty, since I'm the only one with a Spritz gun)
thumbprints filled with colored icing
Russian tea cakes (or Mexican wedding cookies, if you like that name better)
Nutrolls, and
sugar cookies

My sister is making bring cranberry walnut cookies, and I also made Chocolate chip, peanut butter oatmeal cookies and a Norweigan cookie called Kringla.
 
I did:
peanut butter cookies
M&M cookies
Hot Cocoa cookies

and we'll be making the cut out sugar cookies later this week. :)
 
What are black and white cheescake bars? They sound good!

They are sooo good!

Crust:
12 oz. semisweet chocolate chips
1/2 cup butter
2 cups graham cracker crumbs

Put the butter and chocolate chips in a glass bowl and microwave for 45- 60 seconds. Stir until blended. Add graham cracker crumbs. Mix well. Press into the bottom of 9x13 pan reserving 1/4 cup for later.

Cheesecake:

8 oz. cream cheese softened to room temperature
1 can of sweetened condensed milk
tsp vanilla extract

Cream the cream cheese until smooth. Add the vanilla and sc milk and blend until smooth and completely mixed. Pour on to chocolate crust. Sprinkle reserved crumbs over cheesecake. Bake at 325 for 25 minutes. Cool completely in pan before cutting.

3. Santa's Whiskers
4 2 batches of Lemon slices
5. 2 batches of Nanaimo Bars
6. 2 batches of raisin tart bars
7i. Snickerdoodles
8. Peanut butter cookies
9. 2 batches of sugar cookies
10. Chocolate Confetti

We ate a few of these already, hence the extra batches!
 
I've been baking today as well.

- chocolate cookies (a new recipe; they're made out of cake mix! kind of like a chocolate version of russian tea cakes.)

cherry almond icebox cookies
and two more that I can't even remember, but I know we made 17 different types.

The scary thing is, the menfolk in the family have already eaten through about half of those!

Dh does our baking and he made the peanut butter/Hershey kiss cookies, wedding cakes and oreo truffles with mint oreos. We had DH's family over Saturday and we also inherited some nut goodie bars, mounds bars, chocolate drop cookies, caramel corn and a couple other things--everyone brought some goodies and NO ONE brought theirs home :scared1:. We did get ALL of my MIL's homemade caramels and we are NOT sharing those :thumbsup2.
 
I baked cookies all weekend. This year I did:

Oatmeal (sans raisens as DH hates raisens)
Peanut Butter
Chocolate Chip
Pumpkin
Coconut Macaroons
Gingerbread cutouts
Oreo Truffles (still have to dip/decorate)

I hate gingerbread but wanted to make cutouts and this is the first cutout recipe I found that I like. They have a really light flavor (not too much spice) and are firm enough to decorate but still soft to eat. I only dirty iced them to make sure we liked them...next time I will go all out on decorating Highly recommend!

And I eat a lot of them fresh & warm outa the oven so by the time I'm done it's...... :crazy2:

I did a cookie swap so I didn't make all of these totally myself but I have homemade for Christmas:

- Russian Tea Cakes
- Peanut butter cookies with hershey kisses
- Chocolate covered peanut butter ritz
- Chocolate balls
- Butterscotch chow mein cookies
- Scotcheroos
- Oreo truffles (DH made these!) :)
- Mexican wedding cakes
 
The problem with drop cookies like Snickerdoodles is they get stale so you can't make them too far ahead.

roll out sugar cookies

I'll be making 2 more on Wednesday: chocolate chip and I'm still deciding on the other one.
