Your Best Potluck Dish Thread - Updated

My family and friends love this Grape Salad that I make. I got the recipe from a friend and it has become a staple at all my parties. It is very easy to make:

4 lbs of red seedless grapes (washed & dried)
8 oz Cream Cheese
8 oz Sour Cream
1/2 cup sugar
1 tsp vanilla
1/2 cup brown sugar
chopped pecans (optional)

Place grapes (off the vine) in a 9 x 13 baking dish

Mix together Cream Cheese, Sour Cream, sugar & Vanilla until smooth (I use regular cream cheese otherwise it stays lumpy). Once mixed add to the grapes and toss until well coated. When ready to serve, Sprinkle Brown Sugar (and pecans) on top. It is best if it is chilled for a bit, but is still good right after making it.

Beware- these are very addiciting!!

DH & I are addicted to this Antipasto Pasta Salad.

You can tweak it to your preferences: I use rotini pasta, all salami instead of 1/2 pepperoni, halved grape tomatoes, skip the red bell pepper, add a small chopped onion and only 1 TBS. of oregano to the dressing.

Keeps well for several days - I actually prefer it the 2nd day after the dressing has soaked in a bit.
 
Sausage Won Ton Cups


1 lb. ground pork sausage

1 1/2 cups shredded cheddar cheese

1 1/2 cups shredded monterey jack cheese

1/2 cup Ranch dressing

1/3 cup chopped black olives

1/3 cup finely chopped red bell pepper

Finely chopped jalapeno pepper (optional)

1 16 oz. package of won ton wrappers (usually found in produce section)



Brown sausage in a large skillet over medium high heat, stirring until it crumbles and is no longer pink; drain on paper towels. Combine sausage and next 6 ingredients.

Coat 4 miniature (1 1'3/4") muffin pans with cooking spray. Place wonton wrappers in pans, using fingers to create fluted shape. Lightly spray wonton wrappers with cooking spray. Bake at 350 degrees for 8 minutes, turning pans after 4 minutes.

Spoon 1 heaping tablespoon filling into each won ton cup. Bake at 350 for 9-10 minutes or until browned and thoroughly heated. Remove from pans and serve hot.
 
I know everyone has this recipe or a variation of it but I must have taken this to get togethers 100 times and there is never any left.


Mexican Layered Dip

2 cans bean dip

1 envelope taco seasoning

16 oz. sour cream

guacamole (optional)

grated cheddar (amount is optional - we like a lot of cheese ;-)

tomatoes (diced)

1 can sliced black olives

chopped green onion


Directions:

1. Spread 2 cans of bean dip on the bottom of 13" x 9" dish

2. Mix taco seasoning and sour cream thoroughly and layer over bean dip.

3. Layer shredded cheddar on top of sour cream mixture.

4. In no particular order layer chopped tomatoes, green onions, and black
olives.

5. Chill.

6. Serve with tortilla/Tostito kind of chips.
 

Chicken Ceaser Pasta Salad is good.

1 box Rigatoni cooked Pasta-Drained
1 Jar of Marie's Ceaser Dressing
3 large chicken breasts chunked-seasoned to your likeing
1 pint grape tomatoes sliced in half
1 cup fresh grated parmesian-must be fresh gratede reserve some for garnish
1 package Bacon(microwave precooked works best) Crisp broken up
1 small-med red onion
Fresh Cracked Pepper
For presentation 1 head Boston Bibb lettuce

Mix all the Ingredients together then toss in Ceaser Dressing.
Take the head of lettuce and line a nice platter with the leaves. Arrange salad over the top garnish with extra parmesian. Serve Chilled.

This is very yummy a dinner in its self.
 
I have a great fruit dip that always keeps them guessing about the ingredients. I put together a tray of cut up fruit, usually several of the following, whatever looks the best at the grocery store - watermelon, strawberries, cantaloupe, honeydew, grapes, pineapple (sometimes I used canned pineapple in its own syrup) and then I serve it with the fruit dip. The whole thing always disappears. When they ask what's in the fruit dip, ask them to guess, it's a lot of fun, because they never guess it. Here's the fruit dip recipe - one jar of marshmallow fluff - regular size and one package of cream cheese, mix the two together and that's it. That's the dip.
