I love them. When I eat them raw I just cut them and eat them skin, seeds, and all. I also like to cook with them. When I do that I remove the skin and the centers, leaving on the "meat". For those of you who don't like them because of the texture try them as a part of a dish.
My two favorites are:
Diced cucumbers, mangoes, and tomatoes as a toping for grilled chicken. I also add basil.
Diced cucumbers, red, yellow, and orange bell peppers, couscous make with chicken or vegetable stock and fresh mint.
There are some foods I don't like on their own, especially raw, that I like as part of a meal. I am like that with tomatoes. I won't just bite into one but I use them in cooking.
