I understand that on the cruise, you give the tip to the servers on the last night of the cruise (at dinner).
When would we give the tip if we planning on eating somewhere besides the three restaurants?

You can give them to the servers on the next to the last night or the morning that you disembark at breakfast. You can also drop by to give them to them before you dine elsewhere.
 
Just a note that breakfast and lunch at the sit down rest. are open seating and your evening servers might be working elsewhere. You can give your tips to them anytime you want and anytime you think it might be your last time to see them would be o.k.
 

Can you tip your waiter at Palo via the guest services, like you can for the others? I was trying to figure this out, since you might be visiting Palo early in the week, and if you didn't want to have cash, could you visit guest services a bit later and arrange for the tip? But then how would the waiter know it was from you, and are they going to be disappointed at the actual meal if they think wew stiffed them? Don't want to ruffle any feathers, but nor do we want to carry much cash.

You could visit guest services the first day and get your tip voucher and envelope for any one you wish. They'll put the value onto your card and you can tip with the vocher any time you want.
 
We had Palo on our last night so, we just went to our scheduled restaurant after we ate. We gave our tips and said our tearful goodbyes.:hug:

We just left a tip for our Palo server, when he presented us with our check. We had a DISmeet Champagne Brunch, and each couple were given a seperate check. This tip was charged to our cabin, no need for cash.
 
Regarding breakfast on the last morning on the ship, your servers are in the dining room that you had dinner in the night before and you sit at your assigned tables for that morning only. This is why it would be easy for you to find your servers that last morning even if you decided to eat at the buffet.
