Worth it to extend trip by one day?

We are slated to go down to Disney April 25-May 2nd. We have a mid afternoon flight on the 25th and a late flight coming back, so we are looking at around 7 full days in the parks. We are booked through a RO offer with Cheaptickets and have AP's.

All that aside, with Mine train set to open on May 2nd or 3rd so I'm wondering should I try to extend the trip an extra day? I guess it will only involve booking a second reservation and changing the plane tickets right? The flights look about the same, so I am talking about another $300 or so dollars for the room.

Oh, second question if we were to transfer hotels from WL to POR for that last night how would that work? We are planning on staying POR in the fall and I would love to get a feel of whether or not we are going to hate it before we book another week there.

Thoughts?
 
That's a tough one. I don't think I would do it, but that's just because I would be ticked if I added a day and paid the extra and then it didn't open on time.
