World showcase sitdown vs bar hop

A co worker and I are attending the Disney Institute and are planning to have dinner at the World Showcase. I was thinking about bar hopping through Mexico, Germany, Italy, etc. vs sitting down for a meal. Has anyone done that? How's the food at tutto gusto (tutto Italia is booked)

I much prefer spending the evening snacking around the world showcase. There are so many great CS options.
