I think an hour average per pavillion is about right, but I LOVE WS. It is my favorite thing at WDW.

As you might notice the street shows don't even really start until 2pm.
I drew a personal plan for an afternoon to see just the Performers - was:
12:30 Mexico boat ride
1:00 San Angelo Inn Lunch
1:20 Marichi (watch from table) (20m)
2:45 Voices of America (15m)
3:40 Japan Drummers (15m)
4:30 Italy Statues (30m)
5:00 UK Players (25m)
6:00 France- mimes (20m)
6:30 Canada - Off-Kilter (30m)
Notice I only have 1 ride and it will take 6 hours! To see the movies/rides you would have to add Norway ride, American movie, China movie, France movie and don't forget the gardens and shops of Japan, Moroco, Canada and a pint at UK! Some Pavillions would need an 1.5 hours for movie, shops + performer while others like Italy you could do justice in about 15 mintues + performer.
And remember it takes about 20-30m just to walk around WS so you have to factor in about 10 minutes to get from one to another if they are next door.
But I also think 10 hours in one day in WS would be overkill - too much walking and would dull the appreciation for the architecture and minute details of the individual pavilions. To truly do it justice for a first timer with plenty of time, IMHO, is two afternoons in WS.
