Wondering if Spring Break trip is right time to go in 2021

Hey there! So my family and I love Disney and haven't been in over 10 years! We had an entire trip planned for last June, down to fast passes and dining, and then the parks were closed, and we have yet to reschedule. I am thinking of doing a trip during the week before Easter when our schools are on spring break, however, I am not sure if we should wait until summer instead. We want to get back to Disney ASAP, but we also want to be sure to be there when the new ratatouille attraction is open and things are slightly more normal. LMK

I would only go this spring if you would be satisfied with conditions as they are currently. There is likely to be only the ongoing, gradual changes toward normal, and not likely to be much different than now. With no announced date on Ratatouille, no guarantee of that being open. Return to pre-covid normal is likely still a year away, though, and you may not want to wait that long.
