Is there any way to catch WOC from outside the parks? maybe from one of the hotels?

For an ok view there is a deck on the GCH villas. It can be viewed from about half of the PPH rooms.

From Katella you can see the top of it.

NOTE: Officially the viewing area at GCH is only for those staying in DVC rooms. Sometimes the door will let others that are staying at the hotel out there as well, but I have seen security checking room keys and asking guests who are not supposed to be there to leave.

That being said, it is not the best view of the show, unless you like to watch how the fountains and such work (which I do), otherwise, it is truly best seen from the viewing area inside the park.
