Can anyone tell me if the boats from the WL go to the Poly, CR and GF? Are there separate ones that only go to the MK and separate boats to the resorts?

There is boat that goes from the WL to the Contemporary.
The other boat goes to the MK. To get to the Poly or GF from the WL on a boat you would have to go to the MK and get the boat to the Poly and GF from there.

The larger Green Flag Boats runs between Ft. Wilderness Campground, Wilderness Lodge and the Magic Kingdom. The smaller Blue Flag Boats run between the CR, Ft. Wilderness, and Wilderness Lodge.

Purplern is correct the dock at Magic Kingdon is near the boat docks that run to the Poly & GF.

There is a boat that will take you from WL to Contemporary Resort. You can catch the monorail from CR to Poly & GF. If you want to do the boat from WL to Poly or GF, you have to first take the boat from WL to MK. At MK, you can transfer onto the boat going to Poly or GF.

I am wondering which would be the best way to get there for a breakfast and a dinner AR at 1900 Park Fare.

We do this alot, almost always make a ressie for 1900 Park Fare, we take the boat from the WL to the Contemporty then take the monorail to the GF. Never even occured to me to go to MK then hop another boat to the GF....learn something everyday from the boards!

About 20 years ago there was a boat launch connecting the Poly, Contemporary, and Ft Wilderness. I'm not sure when it was discontinued; I'd love to know.
