I'm going to WDW for the first time in 2 weeks, and we got the Dining Plan. I get that there is no liquor included, but if I want to have a glass of wine with (table service) dinner, do I pay for that separately? Can I not use my table service voucher at all in that case? Thanks.

You can order a whole bottle if you wish, but you will be billed for all non-included items (wine, appetizer, extra salad, whatever) on top of the use of your TS credit.

Your credit will cover your entree and dessert in this case, if you choose not to use the non-alcoholic beverage then you just won't get one.

HTH.

Since you are going in 2007, the table service appetizer will be included in the dining plan. Appetizers are excluded from the basic plan for stays beginning after January 1.

If you order alcoholic beverages, you will be billed separately for them. The plan does not use "vouchers" but stores your credits to your room key.

Also note that your bill for the alcohol may contain an included gratuity - be aware of this so you don't tip twice for the alcohol bill. The tip is included in the 2007 dining plan, but that only applies to items covered by the plan.
